One Potato, Two Potato...

One potato,  two potato,  three potato,  four. 

Once your family tries this dish, they'll be begging for MORE!

 

Potatoes O'Brien

 

1 lg pkg. of frozen hashbrowns with onions and peppers

1/2 c. butter, melted

1 can cream of chicken soup

1 pt. sour cream

1½ c. grated cheddar cheese

1/3 c. chopped onions (optional)

1 c. cornflakes cereal or potato chips

 

In a large stove-top pan, mix melted butter, soup, cheese, sour cream and onion.   Warm on stove top and stir until well-blended.  Add potatoes.  Bake in 9x13-inch pan for 30 minutes at 350 degrees after covering potato mixture with cornflakes or chips.

 

For potluck dinners,  I've tripled the recipe and cooked in the crockpot for 3 hours without adding any topping.    It's not uncommon to hear,  "We've assigned you the Potatoes O'Brien," for covered dish dinners.  Of course because my last name is O'Brien,  maybe it's just a way to help them remember what I'm bringing.   Or maybe they know I'm the one who needs  help to remember what I'm bringing!
