The Other White Meat

I love chicken, but occasionally tire of it.   This is a simple, yet flavorful alternative using  "the other white meat:  Lemon-Rosemary Pork.  It's also easy to make ahead and throw in the oven once company arrives.

 

Lemon-Rosemary Pork

 

2 pork tenderloins (1 lb each)

1 medium onion, finely chopped

1 tsp. grated lemon rind

1 garlic clove, minced

1 tsp minced fresh rosemary

2 T. olive oil

1 T. freshly squeezed lemon juice

1/2 tsp. salt

1/2 tsp. black pepper

 

Set pork tenderloins aside.  Combine remaining ingredients and rub over tenderloins.  Place on rack in shallow roasting pan in 400 degree oven and bake for 45 minutes or until meat thermometer reads 160 degrees.  Once removed from oven cover with foil; let stand for 10 minutes before slicing.  (~ 8 servings)

Here's another easy recipe for pork chops. Hope you don't mind me sharing...

Yummy Pork Chops

1 sliced lemon or lemon juice
1/3 cup ketchup
1/3 cup water
1 tablespoon brown sugar per # of chops (or less if you prefer)

Heat oven to 350. Mix 1/3 cup ketchup with 1/3 cup water in separate bowl. Place chops in casserole dish flat, place 1 tablespoon brown sugar on top of each chop, place one slice of lemon or lemon juice on top of br.sugar, then pour the ketchup mixture over all the chops. Place in oven for 30 minutes.

Sounds delicious. I happen to love that other white meat, it seems to have more flavor and stay jucier. I'm looking forward to trying your recipe.
