I love chicken, but occasionally tire of it. This is a simple, yet flavorful alternative using "the other white meat: Lemon-Rosemary Pork. It's also easy to make ahead and throw in the oven once company arrives.
Lemon-Rosemary Pork
2 pork tenderloins (1 lb each) 1 medium onion, finely chopped 1 tsp. grated lemon rind 1 garlic clove, minced 1 tsp minced fresh rosemary 2 T. olive oil 1 T. freshly squeezed lemon juice 1/2 tsp. salt 1/2 tsp. black pepper
Set pork tenderloins aside. Combine remaining ingredients and rub over tenderloins. Place on rack in shallow roasting pan in 400 degree oven and bake for 45 minutes or until meat thermometer reads 160 degrees. Once removed from oven cover with foil; let stand for 10 minutes before slicing. (~ 8 servings)
