Fresh Bruschetta

A friend gave me a "bouquet" of basil from her garden.  I recently made this basil-based appetizer for a party and it received rave reviews:

 

Bruschetta

 

2 French baguettes

1 cup fresh basil leaves (loosely packed)

2 pints grape or cherry tomatoes

3 cloves garlic, minced

1/2 c. shredded parmesan cheese

1/2 c. - 1 c. extra virgin olive oil

1 (1 1/4 oz) envelope of Lipton's Recipe Secrets herb wit garlic soup mix

 

Chop basil leaves finely.  Seed and chop tomatoes into small bite-sized pieces.  Combine tomatoes, minced garlic, basil and parmesan cheese in a small bowl.  Sprinkle the soup seasoning pack over the mixture and gently mix.  Drizzle olive oil over all until generously covered.  Allow to refrigerate at least an hour before serving.  Slice baguettes thinly and toast under broiler.  This makes a nutritious and flavorful spread.

I can't wait to try this! I think I'll try it tomorrow night since we are having pasta! I LOVE bruschetta!
One question...how many tomatoes should I use? Hehe! Thanks!

I'm going to try this for our church's new year's dinner tomorrow night. Because I don't have a big budget I'm going to buy del monte's diced tomatoes with basil, garlic, and oregano which I don't know if the oregano will hurt the taste, but it shouldn't. Then I 'm going to get some Garlic bread and grill it.
