Curried Rice

1 medium onion chopped

1-2 tsp. curry powder

Ό tsp. ground cinnamon

1 Tbs. oil

1½ cup chicken broth

1½ cup Minute Rice (premium enriched long-grain)

Ό cup raisins

2 Tbs. almonds sliced and toasted

1 medium unpeeled red or green apple diced

 

Cook and stir onion, curry powder and cinnamon in hot oil until tender but not browned.  Add broth; bring to boil.  Stir in rice and raisins; cover and remove from heat for 5 minutes.  Stir in almonds and apples and serve hot.  Left-overs taste great the next day served cold.  Optional:  add grilled chicken pieces.

Oh what a great day for this. I think I'm going to make it right now, or at least for dinner. Thanks for sharing! Oh, check out my scone recipe -- if you like scones. I just posted it last night.
