My mom traditionally served this pastry to our family on Easter and Christmas mornings. My memories include excitement in the air, being in our pajamas together until noon, and the early aromas of a roasting beef or turkey for later in the day. Just as we were feeling famished after opening gifts, this beautiful pastry was presented to us. I know I didn't appreciate all her pre-planning and efforts as a child. She made it look so easy and magical.
Ingredients:
BOTTOM LAYER: 1 stick butter 1 cup flour 2 T. water
FILLING: 1 stick butter 1 cup boiling water 1 cup flour 3 eggs 1 tsp. vanilla or almond extract
TOPPING: 1 can vanilla frosting 1 tsp almond extract 1 cup slivered almonds
Bottom: Mix butter, flour, and water into dough; roll out thinly on an ungreased cookie sheet or any flat, fluted baking tray.
Filling: Mix butter, water, flour, flavoring; blend well adding one egg at a time until smooth. Spread mixture over bottom layer. Bake 1 hour at 350 degrees. Cool.
Topping: When cooled, frost with almond flavored frosting and sprinkle with almonds. (and halved maraschino cherries at Christmas)! Serves 10-12.
