Wassail comes from the words was haile, which means "be of good health."

1 gallon apple cider
2 cinnamon sticks
1 whole nutmeg
5-6 whole cloves
In a large stainless steal or enamel pot, bring the above ingredients to a simmer, but do not boil. Simmer for 30 minutes. Serve warm.
This custom originated with the English, who would toast each other with mugs of hot wassail.

We have a german wassail. It translated to 'Fire in the Bowl'. (really) We stack sugar cubes above on a pre-made trowel and then pour Rum over it and it burns and flames...dropping the sweet sugar into the lower part that is like a crock pot. That contains juiced lemons and oranges and lots of port wine. We count out 12 cloves and pierce them into a wedge of lemon and float that in this hot drink. Look out..this goes down slowely but the 'kick' sneaks up on you..We traditionally make this on New Years' Eve. Do not serve to youths. (ha)
