Chicken Reuben

8-10 boneless chicken breasts

1 (12-oz) can sauerkraut

6 - 8 slices Swill cheese

1 (16 oz) bottle Thousand Island dressing

Place chicken breasts in baking dish, sprayed with vegetable oil.   Add well-drained sauerkraut.  Top with Swiss cheese.   Pour Thousand Island dressing evenly over all.   Cover with foil.   Bake at 325 degrees for about one hour or until chicken is cooked thoroughly.    If you like a reuban sandwich, you'll have to try this easy casserole version.   Serve on your favorite toasted rye bread or as high protein, low-carb entree.

Recipe sounds GREAT.....my hubby will LOVE it!!! Also interested in the Thomas Jefferson education. Can you give me some sources?? Or are the only ones on the carnival post of yours?
