Easy Potato Pancakes

1 (30 oz) bag frozen potatoes (shredded)
1 c. sweet onions, finely diced
2 eggs, beaten
salt to taste
1 tsp. black pepper
2 TBLS. flour
1 TBLS. cornstarch
vegetable oil (for frying)
  1. Defrost grated potatoes in a colander. Press with paper towels to remove excess moisture.
  2. Add onion, eggs, salt, pepper and flour. Mixture should be thick and cohesive.
  3. Pour about 1/4 inch of oil into a heavy-bottomed frying pan.
  4. Use about 2 Tablespoons potato mixture and place in the oil and press into a patty.
  5. Fry for about 3 minutes. Flip and fry for another 3  minutes. If pancake cooks too fast, reduce oil's temperature. If it takes longer, turn the oil up so pancafes don't get soggy.
  6. Drain on paper towels and serve immediately, (or keep in a 250 oven on a baking sheet).

Great served with any kind of pork or bacon.  We top with sour cream or applesauce.

Popcorn Cake

This is such an easy recipe:  kids can make it as a gift for Christmas, or take it to your next gathering of friends.  M & M's come in "seasonal colors" now, so at Christmas time we use the red and green variety, at Easter we use the pastels, and Halloween we use the black and orange and shape this recipe into individual popcorn balls.

Popcorn Cake

15 cups plain popped popcorn

2 cups M&M candies

1 cup lightly salted peanuts

1 stick unsalted butter

1 lb. marshmallows

2 teaspoons + 1/4 cup vegetable oil

Grease a large tube or bundt pan with 2 tsp oil; set aside.  In a large bowl, mix popcorn, M&M's and the peanuts.  In a small saucepan, melt the butter, the remaining 1/4 cup oil and marshmallows, stirring occasionally.  When melted, pour over the popcorn mixture and stir to combine.  Pour into cake pan; press to fit.  Cover with foil to keep moist and let firm for 3 to 4 hours.  Invert cake onto plate; shake gently to release.  Serve at room temperature.  This is a festive, tasty treat for the holidays.

Chicken Reuben

8-10 boneless chicken breasts

1 (12-oz) can sauerkraut

6 - 8 slices Swill cheese

1 (16 oz) bottle Thousand Island dressing

Place chicken breasts in baking dish, sprayed with vegetable oil.   Add well-drained sauerkraut.  Top with Swiss cheese.   Pour Thousand Island dressing evenly over all.   Cover with foil.   Bake at 325 degrees for about one hour or until chicken is cooked thoroughly.    If you like a reuban sandwich, you'll have to try this easy casserole version.   Serve on your favorite toasted rye bread or as high protein, low-carb entree.

It's Apple Season!

Taffy Apple Salad

3 c. diced apples, unpeeled

1 (20 oz) can crushed pineapple

1 c. dry roasted nuts

1 (8oz) container Cool Whip

1 (3 oz) pkg butterscotch pudding

mini marshmallows

Mix diced apples, crushed pineapples, nuts, Cool Whip and pudding together.  Add marshmallows to taste.  Chill until ready to serve.   Not only tasty, BUT SO SIMPLE, even a child can make it!

Pumpkin Soup

1 medium sweet onion, chopped

2 carrots, chopped

4 ribs of celery, chopped

2 sticks of butter

6-8 c. chicken broth

2 cans pumpkin pie filling

1 pt. heavy cream

1/2 c. brown sugar

2 tsp. cinnamon

1 ½ tsp. ground nutmeg

Saute' onion, carrots, celery and butter in large soup pot.  Add chicken broth to vegetables and bring to a boil.  Add pumpkin and stir until incorporated.  Turn heat down to low simmer, add heavy cream and stir; do not let it come to a boil.  Turn off heat and add brown sugar, cinnamon, and nutmeg.  Garnish with a dollop of whip cream and paprika.

Breakfast Pizza

1 (8 oz) pkg. refrigerated crescent dinner rolls

1 (12 oz) pkg ground pork sausage cooked and drained

1 c. frozen southern-style hash browns, thawed

1/4 c. chopped onions/peppers optional

3 eggs

1/4 c. milk

1 c. shredded cheddar cheese

Heat oven to 375 degrees.  Press crescent roll dough against bottom and sides of greased 12" pizza pan, pinching seams together to form crust.  Top with sausage and hash browns.  In a small bowl, beat eggs and milk;  pour over pizza.  Sprinkle top with shredded cheese.  Bake 20-30 minutes or until golden brown.  Cut into wedges to serve.

Barbecue Ham Sandwiches

I froze some ham from our Easter dinner for this quick and easy meal:

1½  cups chili sauce

3/4 cup packed brown sugar

1/2 cup water

3/4 tsp prepared mustard

1/2 tsp chili powder

1/8 tsp ground cloves

1½  pounds shaved/sliced fully cooked ham

6 hamburger buns, split and toasted

In a large saucepan, combine the first six ingredients.  Cook, uncovered, over low heat for 15 minutes.  Stir in ham; heat through.  Using a slotted spoon, serve on buns.

Greek Green Beans

1-2 lbs fresh green beans, trimmed

1 (14.5 oz) can diced tomatoes

2 tsp. dried oregano

2 tsp. olive oil

1/4 tsp. salt

1/4 tsp pepper

1/2 cup sliced black olives

Combine all ingredients in Dutch oven, bring to boil over medium heat.  Reduce heat and simmer, covered, until tender, about an hour.  I prepared my ingredients in an electric skillet on Easter Saturday, then just plugged it in an hour before Easter dinner.  We had 30+ for dinner, so I needed a "no fuss" dish, which allowed me to enjoy our family and friends.  The timing and tenderness were perfect.

Chicken Tortilla Soup

INGREDIENTS

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10.5 ounce) can condensed chicken broth
  • 1 1/4 cups water
  • 1 cup whole corn kernels, cooked
  • 1 (4 ounce) can chopped green chile peppers
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/4 cup chopped fresh cilantro
  • 2 boneless chicken breast halves, cooked and cut into bite-sized pieces
  • crushed tortilla chips
  • sliced avocado
  • shredded Monterey Jack cheese
  • chopped green onions

DIRECTIONS

  1. In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
  2. Stir in corn, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.
  3. Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.

Sometimes we make it vegetarian: it's even good without the chicken!
