A Week of Meals...

Can it really be?  Can it really and truly be the 18th of  September already? My, my, my!  I am not certain that I am ready for Fall but it is well on its' way and deep down inside...I do so love it.

 

The smells, the chill in the air despite warmer temperatures, the food, the color, the clothes...just love Fall.

 

I am sure you noticed the title, "A Week of Meals..."  Yes, I am putting my meal plan to publication.  Keeping Fall in mind.  It won't be as "Fall like" as I want due to budget but it will certainly maintain a slightly heavier and warmer substance than Summer menus did.

 

My home boasts a cookbook cupboard.  It wasn't built for that.  The cupboard was built in 1923 as a Dining Room Hutch in our 1923 home.  I am certain it was built and attached to the wall as a home for china.  Over the past 7 years that we have lived here it has housed a number of different items.  It now houses Christian books and cookbooks.  About 1/2 and 1/2 of each topic.

 

I LOVE cookbooks.  Particularly old/vintage/antique ones.  I also use them.  But, of late, I have not perused their pages as often because I am trying to feed my family healthy fare and my husband and I somewhat reduced calorie and fat fare.

 

So, what I most likely will be using from here on out is:  Everyday Food by Martha Stewart, current and past issues for the month of September.  AND, Cooking Light, current and past issues for the month of September.  I will indicate which recipe comes from where.  If no indication is made it is simply my own concoction.

 

This keeps it simple for me and I don't overbuy or get overwhelmed by "other recipes I really want to try".  Someday I'll do all those others recipes.  For now, I am trying to keep it simple.

 

If you like the sound of something and want to try it let me know in comments and I'll post the recipe!

 

Here goes:

 

(just a note:  MrMagoo typically get something different for snack and lunch as I provide him with less mess and more protein for his mind and running around...)

Lunch: Chicken Salad Sandwich (roasted chicken, shredded carrot, celery, apple, sliced almonds, mayo) Chips, Fruit

 

pm snack: Toasted English Muffin with Peanut Butter and Apple sprinkled with Wheat Germ

 

Dinner:  Chicken and Noodle Soup and Rolls

Breakfast: Oatmeal

 

am snack: Grapes

 

Lunch: Ham Sandwich, Chips

 

pm snack: Salami and Cream Cheese

 

Dinner: Roast in crock pot, Potatoes, Carrots, Sliced Tomatoes

 

Wednesday, September 20, 2006

 

Breakfast: Toast with Butter and Cheese

 

am snack: String Cheese and Crackers

 

Lunch: Peanut Butter and Jelly Sandwich, Fruit

 

pm snack: Granola Bar

 

Dinner: (at Grammy and Grampa's house for dinner)

am snack: Trail Mix (dried cranberries, peanut butter chips, chocolate chips, dry roasted peanuts, sunflower seeds)

Dinner: Laura Ingalls Wilder Meat Loaf Supreme with Garlic Mashed Potatoes, Asparagus and Cornbread

am snack: Homemade Granola Bars

 

Lunch: Leftovers

 

pm snack: ??

 

Dinner: Greek Spaghetti (see Time for Twittering and go to May 2006 archives...it's under "Innnntterrrmisision" May  25...sorry couldn't get it linked for some reason) for Daddy and I, Peanut Butter Noodles with Carrots and Peanuts for children

Is there any Chicken Noodle soup left over or any Laura Ingalls-Wilder Meatloaf and garlic potatoes? This makes me hungry just reading about it!

What are peanut butter noodles? Is that a goofy question?

Okay, where can I get the recipe for the Laura Ingalls Wilder meatloaf?? Meatloaf is such a comfort food for me, and I love experimenting with new recipes.
