Menu Plan Monday

I'm still trying to learn how to organize my day with three kids, so I'm going to try and keep it a little bit simple this week!

Monday- Ham and Cheese Quiche
Tuesday-  Steak, Rice and Veggie
Wednesday- Slowcooker Chicken Soft Tacos
Thursday- Slowcooker Oriental Chicken and Rice
Friday- Fajitas

Hopefully some of those meals work out and we don't end up eating cereal or pizza every day :)

Menu Plan Monday

Ok, time to get organized again!  My ankle is healed enough to cook now, and my parents have left and we've eaten all the meals that were brought to us when the baby was born!  So I have no choice but to cook!

Monday- Steak, Potatoes, Broccoli
Tuesday- White Chicken Chili and Cornbread
Wednesday- Chicken Soup and Crescents
Thursday- Baked Ziti and Salad with Cranberries and Pears
Friday- Grilled Cheese and Tomato Soup

Ok, I think that is all the organization I can handle for now, seeing as how it's 3pm and I am still in my pajamas!  Today is my first whole day alone with all three kids, and it has not been the smoothest day :)

Menu Plan Monday

I got most of my planned recipes in last week!  The only one I'm carrying over to this week is beef stroganoff.

 

Monday- Chicken Spaghetti Casserole (no work- it's already in the freezer from last time!)

Tuesday- Beef Stroganoff

Wednesday- Potluck for Bible Study, I'm going to try making some beef croquettes since it's an Octoberfest theme (I can't remember the German name for them!)

Thursday- Grilled Cheese and Tomato Soup or Leftovers

Friday- Chicken and Broccoli Pesto Pasta

Cran-Apple Chicken

I can't vouch for this recipe yet, since I haven't gotten around to making it, even though it's been on my menu plan for 2 weeks!  Hopefully tomorrow!

 

6 boneless, skinless chicken breast halves

1 cup fresh or frozen cranberries

1 green apple, peeled, cored and sliced

1 Tbsp brown sugar

1 cup apple juice or cider (unsweetened)

 

1.  Place chicken in slow cooker

2.  Sprinkle with cranberries and apple

3.  Mix sugar and juice.  Pour over chicken and fruit

4.  Cover.  Cook on low 6-8 hours

Menu Plan Monday

A bunch of stuff from last week didn't get used...my back is getting really bad with this pregnancy!  So here are this week's plans with the carryovers from last week.  To join in or see other's menus, visit Laura!

 

Monday- Tuna Melts and Salad

Tuesday- Beef and Broccoli and Rice

Wednesday- Cranberry Apple Chicken (slowcooker)

Thursday- Grilled Cheese and Tomato Soup

Friday- Chicken Soft Tacos (slowcooker)

Saturday- Itallian Tortellini Stew (slowcooker-recipe from Stacy)

 

Last week I made the Oriental Chicken from my new slowcooker cookbook and it was great!  It got slightly overcooked, but I think that was because I used tenderloins when the recipe called for breasts.  It was so easy, just chicken, honey, soy sauce and sesame seeds!  DH had it with rice and cashews sprinkled on top and I had mine in a salad.
