I wanted to tell you about my day! I guess the So California fires have heat up the whole west coast! It's 76 degrees here! I am in shock! Of course this means we got no school work done, we played outside instead, walked over to the big park and played there. I even pulled out my camera! (The layer of dust on it was so sad!!!) And possibly got a Christmas card picture! (Since who knows when I'll bring my camera out again)
When we got back I wanted sweets but wanted to eat helathy for baby, so we made cookies. We tried these a couple weeks ago and they are SOOO awesome!
Sweet Potato Cookies
1 cup cooked sweet potato or squash 1/2 cup butter, softened 3/4 cup maple syrup 1 egg 1/2 teaspoon sea salt 1/2 teaspoon powdered cloves 1/2 teaspoon ground nutmeg 1 teaspoon cinnamon 1 teaspoon baking soda 2 cups flour (I use Whole wheat) 1/2 cup rasins (I use chocolate chips but we use a little extra) 1/2 cup pecans, chopped
Form into walnut sized balls and place on buttered cookie sheets(we use pizza stones) . Bake at 325 degrees for about 20 minutes. Let cool completely before removing to an airtight container for storage. Store in refrigerator.
My homemade "fish sticks" are almost done! I hope to post some more tonight, I've been reading some great verses I wanted to share (like my good old blogs) but I cant let dinner burn! Have a great night!
P.S I'm 4 months along now, feeling baby move. He/she is most active at night (or maybe thats the time I'm mostly likely to be still. 4 more weeks till you know the name!
