A friend gave us his recipe (which I tweaked slightly) but it is SOO yummy I wanted to share. This is what we are having for dinner tonight!
Zucchini Cheese Soup
2 ½ c chicken broth
¼ c chopped onion
2 zucchini (about 5 cups) chopped with peel
2 T butter
½ c milk
1 c shredded cheddar cheese
Salt and pepper
Cook zucchini and onion in broth until tender about 25 minutes. Pour into blender until smooth, then pour back into pot. Rewarm and add butter, once melted add milk and cheese stir until smooth then season to taste.
