Jun. 4, 2008 - Cooking up a storm!
So could someone please tell the weather it is NOT supposed to be 48 in JUNE?!? Yes that is how cold it was when I went to the grocery store at 9:30 this morning! I'm hoping the sun comes out in a couple weeks so I can get busy picking berries! We picked 38 lbs of strawberries last year to freeze, make into fruit roll ups, dry and make jam with, and it still didn't last us the whole winter!
So since tomorrow I'll be out I tried to get a head start on the cooking.
First we ran out of GRANOLA so I started a new batch of that.
Then I had soaked some beans last night so I made a batch of those for lunches the rest of the week.Then for tonight's dinner I made chicken chili YUM!
And Tomorrow's dinner will be Albondigas, since it reheats well, so I finished that today too.
Then this afternoon I made a double batch of cloud pancakes to freeze so we have a quick breakfast. I just throw them in the toaster oven a few minutes and they are warm and yummy and healthy!
Chicken chili:
1 small onion diced
1 red pepper chopped
1 yellow pepper chopped
2 cloves garlic minced
*saute in olive oil
2 chicken breasts cooked and diced
1 can diced tomatoes
1 can pinto beans
1 can chili beans
1 cup salsa
1/2 packet taco seasoning
Simmer 20 minute serve with shredded cheese.
Albondigas
3 carrots chopped
4 stalks celery chopped
¼ small onion chopped
1/8 c olive oil
4 cups chicken broth
¼ c tomato sauce
Salt and pepper
¾ lb ground beef
6 T cooked brown rice
1 egg
parsley
2 cloves garlic minced
Salt, pepper, garlic powder
Lime
cilantro
Saute veggies in oil until softened. Add broth, tomato sauce, pepper and salt. Cook 10 minutes until boiling. While cooking mix ground beef, rice egg, garlic, parsley salt pepper and garlic powder make small meatballs. Add to soup and simmer 25 minutes. Serve with lime wedges and chopped cilantro.
Refried Beans:
Soak 2 cups beans, in 2 T whey plus enough water to cover your beans by 2-3 inches for 12-24 hours. Drain and rinse and put in a pot covering with 2-3 inches of water. Add 2 slices of raw bacon cut into chunks and a bay leaf or 2. Bring to a boil then reduce heat and simmer for about 2 hours or until beans are tender. Drain them then I mash them with olive oil, garlic powder, cumin, oregano and some salt.
Cloud Pancakes
3/4 c cottage cheese
3 eggs separated
1/2 stick (4 T) melted butter
2 T orange juice
1/2 cup whole wheat flour
1/2 t salt
1 t cinnamon
optional: orange zest
Place cottage cheese, OJ, egg yolks and melted butter in blender (I used my magic bullet) and process until cottage cheese is creamy and smooth. Add in flour, salt and cinnamon and process again (it still all fit in the magic bullet)
Let sit 10 minutes
It a bowl whip egg whites until stiff and fluffy, then fold in batter. Cook right away.
