I've finally gotten around to trying some yummy recipes!
This one is my NEW favorite!

Vanilla Cupcakes with Chocolate Frosting

½ cup coconut flour

½ teaspoon salt

¼ teaspoon baking soda

6 eggs

½ cup grapeseed oil (or olive)

½ cup agave nectar

1 tablespoon vanilla extract

Batter will be watery but will thicken as it cooks. Bake at  350 for 20 minutes. Pour into buttered muffin pans.

 
I LOVE LOVE LOVE these! We are not gluten free, but I can not get whole wheat cupcakes to turn out right, and hate using white. The coconut flour is fluffy and moist like white flour but healthier! You could easily sub the grapeseed oil with olive oil, but when I mentioned being interested in it, a sweet friend blessed me with a bottle! And I am now LOVING grapeseed oil! I used regular chocolate chips as well, though her original recipe is dairy free.


Frosting:

1 cup chocolate chips

½ cup grapeseed oil

2 tablespoons agve nectar

1 tablespoon vanilla extract

Pinch of celtic sea salt

Melt chocolate, stir in rest of ingredients and freeze 15 minutes to cool. When cool whip frosting with hand blender until thick and fluffy.

Pioneer Woman is one of my top 5 favorite blogs! My husband LOVES the new recipes I get from her:)

I did use almond extract instead of maple since my Peter loves it and I never use it (ick next time I'll use vanilla!) and skipped the coffee because I didn't have any!  We dont drink it and I had a small jar for recipes like this one, but recently realized it was 3 years old and tossed it!
