Aug. 19, 2008 - Chicken!

Jenni asked for my Yogurt chicken recipe, so I figured I'd add some of my other favorite chicken marinades too!

Yogurt Coated Chicken:
1 t cumin
1/4 t red pepper
2-3 t garlic powder
1/2 t salt
1 t oregano
6 oz plain whole yogurt
1 T olive oil
3 chicken breasts
dipping sauce:
1/4 cup minced cilantro
1/4 c sliced green onions
2 cloves garlic pressed
1/2 c plain whole yogurt
1 T lime juice
mix all the spices together, dip each chicken in olive oil, then into spices then in yogurt, marinate 24 hours. 2 hours before mix sauce together and refrigerate, BBQ chicken then dip in sauce! Healthy and delicious! I love Ensenada chicken from red Robin, and this is the only thing I have found that comes close!
Fajita marinade:
½ c fresh lemon juice (this was 2 lemons for us)
¼ c pinapple juice (I used the amount from 1 can of canned pineapple)
4 lg garlic cloves, mashed
½ t chili powder
1 t oregano
Marinade raw chicken strips in it for a few hours, then cook.

Apple Marinade:
½ cup apple juice concentrate
¼ cup apple cider vinegar
1 tablespoon Dijon mustard
2 tablespoons olive oil
1 tablespoon sucanat(brown sugar)
2 cloves minced garlic
1 ½ teaspoons soy sauce
