
I tried some new recipes today and was very pleased, so I wanted to share them. We finished dinner with some apple crisp, and I wanted to share that recipe. I think I have before, but it is the quintessential fall dessert. So yummy and welcoming and makes the entire house smell amazing! Don't skip the homemade cinnamon whipped cream. Its so easy and really takes a great dessert to outstanding.
Apple Crisp:
FILLING:
5 Granny Smith Apples cored and chopped into bite sized pieces (Macintosh can be substituted in a pinch) I use a mixture of half of each
¼ cup sugar
1 teaspoon fresh lemon juice
Cinnamon
TOPPING:
1 cup wheat flour
1 stick (1/2 cup) real butter, melted
½ cup brown sugar/succanat
¼ tsp salt
Cinnamon
Whipped Cream:
1 pint heavy cream
¼ cup white sugar
Cinnamon
Toss filling ingredients together and place in baking pan. (1-2 handfuls fresh cranberries are optional) In a bowl, combine topping ingredients with fingers or pastry blender until it becomes a coarse meal, and sprinkle over apple filling.
Bake 1 hour at 350 until apples are tender.
While baking put whipped cream ingredients in bowl (or Magic Bullet) and whip until it forms soft peaks, refrigerate until ready to use, and serve over warm crisp. Serves 6, can be doubled.
Balsamic Steak Salad
1 tablespoon butter
2 tablespoons freshly grated parmesan cheese
1 steak (8-12 oz)
2 tablespoons olive oil
¼ c balsamic vinegar
2 tablespoons FINELY chopped onions
2 teaspoons sugar
2-3 tablespoons olive oil
Salt, pepper, lettuce/spinach,cherry tomatoes lemons, Shaved parmesan for garnish
Mix together butter and grated parmesan cheese. Season with salt and pepper. Set aside.
Salt and pepper steak. Heat oil in skillet then add steak. Cook until desired doneness, remove from pan and slice into bite sized pieces. Toss with butter mixture and set aside.
Into pan, add onions, vinegar and sugar. Cook about 1 minute. Turn off heat. Add olive oil. Make salad, and squeeze ¼ a lemon over each serving. Add steak, shaved cheese, dressing and cherry tomatoes.
Mushroom Cream Sauce for pasta
½ package mushrooms chopped FINELY
¼ cup finely chopped onions
2 tablespoons butter
1 cup chicken broth
½ cup heave cream
1 tablespoon parsley
1 cup freshly grated parmesan cheese
3-4 tablespoons flour
Melt butter in saucepan and add onions and mushrooms. Cook about 5 minutes, add broth and cream. Season to taste with salt and pepper. Add flour and cheese. Serve over cheese tortellini from the refrigerator section.
