Oct. 21, 2008 - Fall Food

We're been enjoying yummy fall food this week! I pureed 2 pumpkins so far and ended up with 8 cups of pumpkin puree! I still have 4 more pumpkins in the garden too! I love pumpkin, so much vitamin A and goodness! And the seeds are so great for you too! Plus they are such a beautiful decoration until you get around to eating them! And I got around to filling my pantry with jars of apple butter!
The sugared pumpkin seeds ended up being a hit, except strangely instead of snacking on them like I assumed, my boys like them in milk, cereal style! They have been snacking like crazy on the apple chips though. I had to make a second batch because my first got gobbled up so fast, and its looking like I may have a couple more to do as well! If you are local and have extra apples send them this way!
Our breakfasts have been very fall flavored this week. Today we had oatmeal with homemade apple butter mixed in. It reminded me of the little oatmeal packets I ate as a kid! It was a big hit!
Yesterday we made pumpkin parfait, and tomorrow I plan on making pumpkin spice oatmeal. Hopefully some time this week I'll get a batch or 2 of pumpkin waffles made and frozen. Fall is so much fun!
I have some pumpkin smoothie recipes, and plan to try caramel apple pie. Our family has discovered Carmel Apple Spices from Starbucks, they are cider drinks that taste JUST like apple pie! And it has inspired me to try to make a pie that tastes that great! I've always stuck with apple crisp. We aren't big fans of pie, and I've been known to make "pumpkin pudding" which is just the pie filling minus the crust!
Maybe I'll even get around to making some yummy fall cookies, but I doubt it!

Pumpkin Parfait
1 cup vanilla yogurt
1/4 cup pumpkin puree
1/4 teaspoon pumpkin pie spice
Mixed together and layer with homemade granola!
Sweet Potato pancakes
2 cups flour (soaked in 1 ½ c yogurt or kefir overnight)
3 t baking powder
1 t cinnamon
1 ½ t pie spice
½ t salt
1 c pumpkin or sweet potato puree
1 egg
2 T oil
Apple butter
4 cups apple cider
12 apples peeled and cut into pieces (4 lbs)
¼ cup brown sugar
1 ½ teaspoon pumpkin pie spice
1 teaspoon cinnamon
¼ teaspoon salt
Cook cider for 30 minutes uncovered. Add apples and cook uncovered on low heat until tender and mushy. Add sugar, spices and salt and puree. Cook on low heat until it thickens, ladle into jars and seal.
