Dec. 3, 2008 - Perfect to somebody

I was going to make a cake today to practice for the gorgeous one I have in my head for Abigail's birthday and I was hoping to find the yummiest recipe that actually looks good as well.
So I made 2 layers with 2 different recipes, figuring one would be great. The first one was flat and buttery and cracked in half! The second was fluffy but dry.  So already I was disappointed. I started making frosting and my spirits lifted a bit it was turning out nice and fluffy, but there was hardly any. I used ALL the powdered sugar in the house, and it still wasn't enough for the cake AND the filling. So I needed to find something to fill it. I decided on my fall back chocolate frosting, the healthy agave nectar kind I use on my cupcakes. It normally takes 15 minutes in the freezer to firm up and be whippable. No.. not today, it knew I had high expectations. It took an hour and still wasn't really ready when I put it between my cakes! So it started oozing out, which made frosting difficult.
I managed to get it looking OK, but it was no beautiful Martha Stewart cake (yes, I know, EVERY time I realize I am NOT Martha Stewart it breaks my heart, the stupid perfectionist in me). So I was feeling sorry for myself when Peter and Andrew come out to the kitchen to see if it is done yet, and Peter says "Wow mom its perfect!" and Andrew being the typical little brother agrees "Yeah mom, perfect!". I tossed some sprinkles on and let them eat it for dinner. Even if it isn't up to my standards at least it impressed the important people, right?




So if anyone has any tips or recipes, please send them on! I have a lot to learn!

Update; Our Happy Birthday Jesus cake turned out much better!

I love your cake!! Don't fret!! You should have seen the first cake I ever decorated-I decided to make Thomas the Tank Engine. He looked very sad.

As long as it tastes good, it doesn't matter.
