Dec. 16, 2008 - Black Bean Chowder


This has been a favorite in our house since I discovered the recipe (and tweaked it of course!)
The boys ask for it once a week, but I love making it for them because it's filling, cheap, delicious and means plenty of leftovers!

Black Bean Chowder

16 oz (2 cups) black beans, soaked overnight in water and 1 tablespoon whey if you have it, then drained

2 cloves garlic minced

Olive oil

2 slices bacon

4 cups chicken broth

3 cups milk

2 tablespoons butter

1 ½ cups shredded cheddar cheese

1/4 cup flour

1 teaspoon liquid smoke

1 teaspoon chili powder

Salt to taste

Sprinkle of cayenne pepper

 

Saute garlic with olive oil. Add drained beans , bacon , chicken broth and seasonings.  Stir well and bring to a boil. Reduce to medium heat and cook covered for 1 hour. Add milk and butter and simmer 30 more minutes. Toss cheese with flour to coat and add to chowder. Serve with sour cream and tortillas.

I havent, I have thought about it because my husband doesn't like black beans, but this is so good I'm pretty sure even he'd like it (he's been deployed since I found the recipe)
