Dec. 17, 2008 - More holiday cookies

Today was cookie day. Just my next door neighbor was able to make it because of the HUGE amount of snow we got last night and today, but that was ok. We had a great time anyways!
Here is my share of the cookies (most of which were delivered to other neighbors for CHRISTmas)




Chocolate Thumbprints with chocolate ganache filling

2 cups flour
1 cup plus 1 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
8 ounces (2 sticks) butter
1 1/3 cup sugar
2 egg yolks
2 tablespoons heavy cream
2 teaspoons vanilla extract

Cream butter and sugar, add eggs vanilla and dry ingredients. This makes a thick dough. Rill into 1 inch balls, flatten and make thumb print indent with the back of a wooden spoon. Sprinkle with coarse sugar and bake 10 minutes. Let cool then fill with ganache.

Ganache:
1/3 cup honey
1/3 cup heavy cream
3 teaspoons vanilla extract
4 ounces chocolate chips
2 tablespooons butter

Combine cream honey and vanilla in a sauce pan.Simmer until honey dissolves then turn off  and stir in chocolate and butter. Let stand 20 minutes Then whip until smooth and thick.

Chocolate Chip: (We didn't make these today but they'll come in  the next few days)
1 cup (2 sticks) butter
1 1/2 cups brown sugar and 1/2 cup sugar (I use 2 cups sucanat)
2 eggs
1 1/2 teaspoons vanilla
2 1/2 cups flour (I use wheat)
3/4 teaspoon salt
2 teaspoons baking powder
chocolate chips
1 cup chopped nuts
350 for 9 minutes
