Apr. 6, 2009 - Greek Potatoes



I thought I had posted this months ago, but I guess not. They are so delicious! Better to make on cold winter days but I'm making them today anyways!

Greek Potatoes

6 medium potatoes cubed

¼ cup fresh lemon juice

1/3 cup olive oil

2 taspoons salt

½ teaspoon pepper

1 ½ teaspoons dried oregano

2 cloves garlic minced

2 cups hot water

Toss potatoes in juice/oil and seasonings. Put into baking pan and add water. Bake uncovered for 1-2 hours at 475 until all water evaporates off.

Are these VERY lemon-y? Because I'm not a huge fan of lemon... Other than the lemon, they sound very good... I may try them on Friday with our Barbecued Beef Brisket.
