You can find so much fascinating information here; it is fun just to browse on your own or with your older elementary/jr. high children. Not a Christian site; and I wouldn't turn my kids loose on it, but we are definitely learning as we explore.
A few years ago the Dr's thought my daughter had Celiac Disease. So we went GF. My daughter doesn't have CD now...they figured out she had other problem...but I feel your pain! I have adapted many recipies to be gluten free. Here's one.
Veg Head Chili
1 can of Rosarita Refried beans
1 can of Kidney & black beans (rinsed)
1 can of diced tomatoes
2 cups any kind of broth or water
1 teaspoon minsed garlic
1/2 of a onion chopped
1/2 green bell pepper chopped
1 teaspoon cumin
1 teaspoon chili powder
2 shakes of tabasco sauce
In a large stock pot, saute onions & garlic in a little oil. Then add bell pepper. Then slightly saute all together for a couple of minutes. Then add tomatoes, kidney & black beans. Give a good stir. Then add 1 cup of broth/water. Add spices. You are welcome to add those to taste. Give a good stir again and let heat up to almost a boil. Add can of Refried Beans and mix. You may need to add the second cup of broth, if you like it a little more soupy. Let cook for about 5 minutes. (doesn't need to boil.
I serve with corn chips and cheese. My kids love this and still ask for it often. This meal can be made in about 30. I will sometimes sub only kidney beans or only use powdered onion or garlic. Just depends on what I have at home.

The bottom line is; We try not to insist on parent-led learning or gravitate toward child-led learning. We try instead to focus on God-led learning and ask for His input and perspective on every aspect of our home school. That way, when others fuss about what Dan and I are doing and make me second guess our decisions -- I can go back to our decision process and find God's fingerprints, reminding me that this is His way.
