My Husband and holidays

I had all kinds of plans for the holidays. I knew Heather would be here and she has so much fun putting together family feasts. So surgery over the holidays would be a breeze. I pre-made all kinds of cookie doughs and specail treats before my surgery. Everything would be perfect.
I didn't count on the weather sending us snow storm after snow storm. So we had only one night of Chanukah together and Christmas They never made it out of their snow covered driveway. So what of my plans? Did I tell you I am married to the most amazing of men? Really, he did not order in Chinese or buy a pizza. He cooked dinner again and again.
And just so I could show my daughter how amazing her father is, I took pictures.

Not just any dinner would do....

Nope, He pulled out my Little Jewish cookbook.....

He made certain the eggs were Kosher before adding them.

And Made Latkes!!!! For real! The amazing man made perfect Latkes!

And I ate them!!!!!
And then Christmas came and withit my Father-in-law and my sister. So He made a brunch of Chili Relleno Cassorole, Cinnemon Rolls and Latkes. After everyone left, there was Christmas dinner for two. He really blew my mind. He got on the internet, found the perfect recipe and made a Standing Rib Roast for dinner! He cooked it to perfection! It was mouth watering and on sale!!!!

And afterwards HE thanked ME for all I do! Really I am so blessed!
So I thought I would start the New Year sharing the blessings God has given me. This man is the greatest of them all and leads to every other blessing God has blessed us with as well.

You are a truely blessed woman !! You know what ? We are twins again as always. My Canadian Sweetie can cook and is such a blessing in the kitchen. You ( dispite the weather) look like you had a very wonderful Christmas. Handsome made us latkes during Chanakah. I am thankful too. I pray that this year our Lord will continue to take you on a journey to grow you even closer to Him.

Oh, oh, oh! How wonderful for you. A blessed Christmas indeed! We were blessed to have all of our children and grandchildren (the whole tribe) to our home on both Christmas Eve and Christmas Day because they live across the street and didn't have to go any great distance to get here. Otherwise, we would have been in the same situation as you.
Have a blessed New Year. I've been following the Gaza news, and it just makes me so sad and mad. Israel just wants to be left alone! If Hamas would "get it" and keep their rockets to themselves, they never would have been attacked. And then when they are attacked, who gets called the "aggressor"? I told my boys that Hamas was like biting, irritating flies to Israel, so they pulled out the giant fly swatter and went after them. In spite of the innocents being killed, I'm with Israel and hope they don't back down. And I pray the new prez will stand by his campaign rhetoric, but it won't take long to know for sure . .

How do you make sure eggs are kosher? I'm curious. Also, would you share your chili casserole recipe?

I never know the best way to respond so I will respond here and on your blog too.
A kosher egg is one that has not been fertilized and has no blood spots. So each egg has to be opened separately as to not contaminate the other eggs and I was just impressed he did it! ( I would not have said a word if he had not!!!!)
As for the recipe....
6 eggs separated
3/4 cup milk
3/4 cup flour
1/2 tsp salt
1 Tbsp butter
1/2 cup chopped onions
1 cup chopped green Chili
Monterey Jack Cheese 8 Oz )cubed in about 1/2 inch cubes)
Preheat oven 350 degrees
combine egg yolks, flour,milk and salt in a blender until smooth ( or food processor)
melt butter in saucepan and add onion cooking until tender
pat dry chilies as much as possible between paper towels
In a bowl beat egg whites until soft peaks form.
Fold in egg yolk mixture, onions Chilies and cheese
Bake in a 9 X 13 pan 20-25 minutes or until knife inserted comes out clean.
Garnishes may be sour cream, salsa, guacamole, olives and salsa verde.
We love it this way. You can use whole chilies and stuff them with the cheese and onions layer them in the pan and pour the egg mixture over them. We love chilies in every bite so we chop them.
