Happy Independence Day!!
Here are recipes for some of the dishes on my menu.
Beef and Broccoli Lo Mein
8 oz thin spaghetti, broken in half
1 tsp dark sesame oil
1 Tble vegetable oil
3 c chopped broccoli
1 1/2 c sliced onion
1 Tbls minced peeled fresh ginger (or powdered ginger)
4 garlic cloves, minced
12 oz sirlion tips, cut into thin strips (or just a pack of chopped stew beef)
3 Tbls beef broth
3 Tbls soy sauce
2 Tbls brown sugar
1 Tbls oyster sauce (optional)
Stir the spaghetti into a pot of lightly salted boiling water and cook according to the package. Drain noodles well, then return to pot and toss with sesame oil.
Heat the vegetable oil in allarge skillet over medium-high heat. Add the broccoli and onion and cook, stirring often, for 3 minutes. Add the ginger and garlic and continue stirring while the mixture cooks for another 30 seconds. Add the meat and cook it, stirring often, for 3 minutes, or until it is no longer pink.
In a small bowl, mix the broth, soy sauce, brown sugar, and oyster sauce. Add the soy sauce mixture and the pasta to the skillet and continue cooking, stirring often, for 1 to 2 minutes, or until everything is heated through. Serve hot.
Makes 4-6 servings
Thai Chicken Curry
1 can (13.5 oz) unsweetened coconut milk
1 Tbls chopped fresh ginger (or powdered)
1 clove garlic, minced
1/2 small onion, chopped
1 tsp grated lemon rind
1/2 tsp red pepper flakes
2 tsp paprika
1 tsp curry powder
1 1/2 lbs boneless skinless chicken reasts, cut into strips
1 to 2 tsp fish sauce (optional)
2 bags (6 oz each) baby spinach
1 Tbls dried basil
1/2 tsp salt
Puree 1/2 c of the coconut milk, ginger, garlic, onion, lemon rind, pepper flakes, paprika and curry powder in blender.
Heat coconut milk mixture in skillet over medium-high heat; cook until mixture thickens and turns brighter red 1-2 minutes. Add chicken, remaining coconut milk, fish sauce. Heat to boiling. Reduce heat to low; simmer, uncovered, 8-10 minutes, until chicken is done. Stir in spinach, basil and salt; heat through. Serve with rice.
Serves 4
Tanzania Chicken
1 stewing hen
1 14 oz can tomato
1 chopped onion
1 Tbls turmeric
1 Tbls garlic powder
1/2 tsp chili powder
1/2 tsp curry powder
salt and pepper to taste
Cut up chicken and cook, leaving meat on bones. (Actually, I just dump the whole chicken in the crockpot and let it stew all day)
Mix together all remaining ingredients, pour over chicken and simmer together. Add a bit of tomoato paste and sugar to thicken a bit.
Serve over rice.

I am definately making the broccoli lo mein. Thats the only veggie my hubby will eat, and I have stew meat at home, may even make it tonite. YUM!!
