A new recipe hit in our home. Mini Deep Dish pizzas. (Not exactly a healthy meal, but all things in moderation~~~Have with a large salad.)
Ingredients
- 1 can pop biscuits (or make homemade)
- Cooking spray, for the muffin tin
- 2 tablespoons Extra Virgin Olive Oil
- 1/4 pound bulk Italian sausage
- 1 cup mozzarella cheese, shredded
- 1 small onion, chopped
- 1 cup mushrooms, chopped
- 1/4 cup pepperoni, chopped
- 1 cup tomato sauce
- 1/4 cup roasted red peppers from a jar, chopped urkey
**You could make with any toppings....whatever your favorite is.....I have one child that will not eat red sauce, so I made her's with extra virgin olive oil and cheese only.....the others I made with just turkey pepperoni
Preparation
Preheat oven to 400°F.
Cut the biscuits into three equal discs. Press them into the cups of a sprayed muffin tin, pushing in on the corners and making sure they go all the way up the sides. Place in the oven and bake until golden brown, about 8-10 minutes.
While the biscuits are baking, place a medium skillet over medium-high heat with 2 turns of the pan of extra virgin olive oli, about 2 tablespoons. Add the sausage and cook until golden brown, about 5 minutes. Add in the onions and mushrooms, and cook until tender, about 4-5 minutes. Add the pepperoni and roasted red peppers and mix to warm through.
Take muffin tin out of the oven and fill each pizza crust with about a tablespoon of sauce, a tablespoon of sausage-onion-pepper-mushroom mixture and a sprinkle of cheese. Place under the broiler until light brown and bubbling.

I had my first holiday baking experience, with my new life style (of no sugar). I am happy to report it went well. Our mid-week service at church this week is our Thanksgiving meal. We usually have more food than we can shake a stick at. My kids wanted to do "turkey" cookies. I also made a large salad with lots of veggies to take (I have to know there is something there I can eat ;0). The kids helped me bake the cookies and deco them. My kids are 8-3-3 and they were all able to do the decorations with little assistance.
I LOVE sugar cookies, but I did not eat one bite. I did not lick the frosting. Yes, thank you very much!!!!!!!!!!

Well I tried a new recipe this morning and I wanted to share it with you all. I have been trying to increase my tightwardary (Mary's word). I went on my friends Shani's blog and stole borrowed
many recipes. This morning I made her monkey bread (well really it started last night) you can find the recipe here. It was amazing and YUMMY!!!! It was so easy to make and was cheap.
Rolls~$1.60
Organic Brown Sugar~$0.96
Butter~$0.17
Vanilla Pudding Mix~$0.17
Cinnamon~$0.02 (already had not sure of price
)
TOTAL~~$2.92
For a family if 5, with left overs.
Oh and here....be jealous, be very jealous.....but you can make your own...EASY

Some of you know I have been sick, well about 8 days now. You know what? I am never sick, don't really have the time. lol Well today I had to go to the Dr. I have been sick with a cold since last Tuesday. It really wiped me out and I was couch bound all week. On Friday, I started getting an earache, not fun. I could not hear at all out of it and the pain was shooting down my neck. Well on Monday I decided enough is enough!!! I can not be sick anymore, no matter how I felt. I decided to ignore it (see post below...I am a nurse...not a good patient). Well I did okay ignoring it until yesterday. Everytime I coughed it hurt like little pins in my chest. So I decided I could have pneumonia, and needed to go to the Dr. I went in and I don't have pnemonia..PRAISE GOD!!! However I have a nasty ear infection...like one so bad I may have to see a ENT specialist and hope I did not do damage. What???? I really thought I was getting better. Well I received two lovely shots...OUCH. Also I have nice prescription meds and I have to go back. NOT FUN!!! I really am okay, at least that what I am telling myself, life has to go on. I will take my meds and I will be good as new. So thank all of you for your prayers and well wishes.
I really wanted to post something more exciting than about my sickness. I do want to share about my supper last night. As some of you know I was in a seminar this weekend about reducing debt. There were some great ideas to help me with my tightwardary (Mary's word). I do cook some from scratch, however I still use a lot of convience foods. However I have been reading my great friends blogs, Mary, Shani, and Tina. I have been inspired by those lovely ladies, and the seminar this weekend, to take it to another level. I had a meal made from scratch last night. I was in co op yesterday, so it is one of my easy meals...but I made it all from scratch. We had turkey sloppy joes, oven steak fries, and homemade banana pudding. Now if I was a good as the ladies listed above, I would have grown my veggies and spices. Who am I kidding, the only thing I have sucessfully grown has been kids. lol So I did buy my produce and meat, but the old me would have bought these things in a can, box, or freezer.
Turkey Sloppy Joes
1lb organic ground turkey (white meat)
1 bell pepper
1 onion
organic ketchup (don't know how much I eyeball it)
worcestershire sauce (eyeballed too)
I puree onion and bell pepper in my blender, Mix it wilth meat, add ketchup and worcestershire sauce. Brown and serve on buns.
Oven Steak Fries
Potatoes (how ever many will feed your family)
Your favorite steak seasoning
Extra Virgin Olive Oil (EVOO)
Heat oven to 450. Place wedged potatoes on cookie sheet. Drizzle EVOO on potatoes and sprinkle on steak seasoning. Cook for 25 minutes and that is all!!!
Banana Pudding I have used this recepie for years....found here. I do not add whip cream to the top, nor do I by that brand of wafers, and I use more bananas. So good going girls for your inspiration. Thanks!!!!!!!

Well I wanted to share a recipe that we LOVE in our family. Orginally I found the recipe on the back of a cereal box. I also have seen versions of it on tv and other places. However I omit peanuts in my recipe, but you could try it both ways or what ever your family prefers.
The ingredients:

6 cups of cereal (some kind of corn, rice, or wheat Chex type cereal...I used organic corn crunch-ums)
1 Package of semi-sweet chocolate chips (I used milk chocolate)
1/4 Cup Peanut Butter
1 Cup of powered sugar
1/2 cup of peanuts (or dried cranberries or butterscotch chips) **I omit this**
Directions:
1. In large microwave safe bowl, melt chocolate at HIGH 1 minute. Stir and heat an additional 30 seconds at HIGH or until melted when stirred. Stir in peanut butter and peanuts (or cranberries or butterscotch chips)*May omit. Gently stir in cereal into chocolate- peanut butter mixture, until evenly coated.
2. Place powdered sugar in 2-gallon zipper-type storage bag. Add coated cereal mixture to sugar and close bag. Gently toss until evenly coated. Store in airtight container in refrigerator.
