Now that it's Sunday, I'm glad that Saturday is done. It was definitely one of those days of "why did I bother to get out of bed". Ugh.
However, we did do school - yes we school year round and use the weekends to catch up on days that were missed during the week. I think we did math, reading, writing, a brief story telling from prompt and reviewing Esau and Jacob relating to being honest or cheating.
The other BIG accomplishment for me was creating a dinner menu for the next 30 days. I pulled out my copy of Once A Month Cooking and wrote down the name of all the recipes that I'd likely try. Last year when we did Awana, we always planned on spaghetti with meat sauce for dinner. I'm still sticking with that for the moment. And there are days were there are planned leftovers, mainly of soup. Of course days of having fish and tacos too. I did try to stay with recipes that would use chicken as I have a good bit of it. Plus I have a enough fish for six meals. In addition to the dinne menu, I also did a shopping list. I included the necessary ingredients for two weeks worth of dinners. Maybe tomorrow I'll get around to posting what dinners we'll be having. This is funny to me ~~ I've indicating that for the next three Saturdays we'll be having "Stir-Fry with the Mystery Meat". I have about three baggies of "mystery meat". I think it might be roast beef, chicken and pork, all cooked of course. But it's unlabled. So we'll be doing stir-fry. And to help balance out the "mystery meat" dinner, I'm determining to make some really nice desserts for the family. Next Saturday we'll have Blueberry Peach Fruit Crisp from the Once A Month book. Followed by ice cream, maybe, the following week. And the final week of our "mystery meat" dinner we'll have Apple-Date Coffee Cake, again from the Once A Month book.
I am so thankful that a co-worker of my husbands sold his mom's upright freezer to us for a very reasonable price a few months back. I can't believe how useful it is and how I ever lived without one. And even though I don't always like shopping at Wal-Mart, a few weeks back they had bags of skinless boneless chicken on sale for $5 a bag - a definite savings. Prior to that they had frozen fish on sale for just under $2 - again a savings. And probably starting soon we'll be seeing good prices on turkeys.
Even though it's expensive, I've been picking up some turkey wingss. The other week when we were doing the grape koolaid, I boiled those wings and made soup. Oh my I never knew how good and simply delicious the broth from cooking turkey could be until that day. So I am definitely looking forward to buying as many "gobblers" as I can possibly fit into my freezer.
And finally the other minor accomplishment was to tidy-up the office. Notice I didn't say "clean up" the office, but just a little tidy-up. You can actually see the wood of my husbands desk. And I had Joshua clean up their desk that is in the office. Apparently I am already teaching him back habits when it comes to having a messy desk.
