Cooking by sight

Do you do that? You know, NOT measure, just making it up as you go? I fixed a big 'ole pot of vegetable beef soup today, just throwing things in as I went. I had an idea of what I wanted. A few months ago we ate at our Sunday School teacher's home, and she had fixed some soup. It was pretty good. (Actually-I think hers was BETTER than mine) Anyhow, I asked what she put in it, but I did not write it down. So, this is my version.
- 1 bag each of the following frozen veggies: corn, peas, green beans, mixed veggies, diced onions.
- 1 large can plus 1 small can tomato sauce
- 1 large can diced petite tomatoes
- 1 lb. very lean ground beef, cooked
- 1/3 bag wild rice
- seasonings to taste
- several large cans of water.
- 1 bottle of vegetable juice
Bring to boil, then turn down to med/low and simmer, covered, for 55 minutes. Then simmer on low for as long as you want. Yummy! (I have no idea how much water I put in, but it was a lot, I just stopped when it "looked right")
I have enough for lunch &/or supper tomorrow, PLUS 2 ice cream tubs for the freezer! (I will thaw some out next week, when I have my liver biopsy done-no one has to cook that way)
Hopefully, tomorrow I can read other blogs, I am still "hitting and missing."

oh I love to do that with soup!! I add lots of garlic and salt and onion. (a spoonful of sugar cuts the acidity of the tomatoe)...some basil....yum yum....bake some biscuits and there is a healthy and balanced meal!! I am coming to MO for dinner!! LOL! My mom was making cornbread and beans I could just about taste it over the phone a few days ago!! Oh I bet that people up here don't eat like that!!! Have you ever eaten a fried dill pickle? NO one here knows what that is!! OH I miss that!! It became popular in the Springfield area in just a few little resturants. I hope you are feeling well and peaceful. God bless!
