Wow! It seems hard to believe that it's been a week since I've taken time to blog! It has been a pretty busy week though!
My time has been spent in canning and in last minute preparation to begin our school year this coming Monday. I think we're ready to get started! I managed to pick a bushel and a half of beefsteak and roma tomatoes on Wednesday, then can 21 quarts of stewed tomatoes and 11 pints of salsa on Thursday and Friday. This was the first time I've canned either. Stewed tomatoes are quite easy, but salsa is very time consuming. Those 11 pints were an 8 hour affair! I told my husband that it had better taste good after all that! (Of course, he could care less how they taste, as he dislikes all salsa!) I tried 2 different recipes, so we should like at least one of them! Besides starting school this week, I'm hoping to get some peach jam canned, as well as more stewed tomatoes, and maybe a small batch of pears.
Well, it is very late at night and I need to get some sleep! Just wanted to let you know that I'm still here!
