Pancit Canton (recipe)

Well, I'm a Southern gal and I like my biscuits and gravy and of course GRITS, but I also love Asian food too.  We lived in Guam for two years and became very good friends with a Filipino family.   This is one of our favorite dishes that I’m making tonight:

 

Pancit Canton

 

1 large chicken breast

3 Tablespoons olive oil

2 cloves garlic, minced

½ medium onion, sliced

1 cup carrots (cut into thin strips)

1 cup celery (thinly sliced)

1 cup shredded cabbage

Salt, pepper, soy sauce to taste

1 pkg. Pancit Canton noodles (dried yellow noodles, can be found in the Asian food section)

  

Boil chicken in enough water to cover it about 20 minutes, or until done.  Save broth, let cool then shred.

 

In a large frying pan or wok, sautι the garlic and onion in the olive oil.  Add chicken.  Cook and stir until onions become transparent.  Season to taste.  Add carrots, celery, and cabbage in that order, allowing about 1 minute between additions. 

 

When vegetables are crisp tender, make a well in the center.  Add ½ cup of the chicken broth.  Put the noodles in the well.  Cover for about 1 minute, then stir until well mixed.  Add more broth if it seems too dry.  Add soy sauce to taste.  The pancit is ready when the noodles are soft.  Garnish with green onions and lemon wedges, if desired.  About 4 servings (unless my hubby is eating!)

 

(oh, this is making me miss my lemon and kumquat trees in AZ!)

Black Forest Dump Cake

This is so easy, but so tasty!

One 18.25 package chocolate cake mix

2-21 ounce cans cherry pie filling

1/2 cup (1 stick) butter

 

Grease a 9x13 inch cake pan (or dutch oven if you’re camping).  Spread the two cans of pie filling on bottom.  Sprinkle with dry cake mix.  Dot with butter.  Bake at 350 for about 45-50 or until set.  Serve with whip cream.  

 

This can be varied with spice cake and apple pie filling, or the old standby yellow cake, pineapple, cherries and 1 cup pecans.

 

Not for the low-carb conscious—I’m still feeling the effect of too many sweets and too much coffee this evening!

Mom, Can We Have Chili for Dinner?

...spoken by my second born this morning.  What is it about rainy days that make us want to just snuggle up with a hot bowl of chili?  I always crave spicy foods when I have a headache.  I wonder, is there some scientific reason?  Oh, sounds like a good research project....

 

I clipped this recipe out of the Louisville Courier Journal sometime between 1998 and 2000.  I tried to do a search, but cannot access the archives.  I did happen to find out that the restaurant, Cunninghams was destroyed by fire in 2001, but subsequent articles mentioned that it would re-open. 

 

Cunningham's Chili

2 Tablespoons vegetable oil

1 large onion, chopped

2 pounds lean ground beef

1 14.5 ounce can diced tomatoes

1-12 ounce can tomato paste

1-15 ounce can tomato puree

2-15 ounce cans red kidney beans

1 Tablespoon crushed red pepper flakes (I only use 1 teaspoon)

1 Tablespoon salt (again, I think this is too much and use 1 teaspoon, adding more if needed)

1 teaspoon granulated garlic

1 teaspoon cumin

1-1.2 Tablesppons chili powder

3 to 4 cups water

 

Heat oil and cook onion until translucent.  Add ground beef and cook until no longer pink.  Add remaining ingredients.  Bring to boil, reduce heat and simmer.

 

My family serves this over spaghetti noodles with lots of cheese and sometimes onions on top.  Add a big hunk of cornbread and enjoy!

Microwave Macaroni and Cheese

 This recipe comes from a cookbook dated 1989, from our home church in Jacksonville, FL.  We were married there in September of 1987.

 

Microwave Macaroni and Cheese

1-8 ounce pacakage uncooked elbow macaroni

3 cups water

1 teaspoon salt

1/4 cup margarine or butter

1/4 cup all purpose flour

1/2 teaspoon salt

2 cups milk

2 cups (8 ounces) shredded cheddar cheese

 

Combine macaroni, water and 1 teaspoon salt in a 2 quart baking dish.  Cover with plastic wrap.  Microwave on High for 10-12 minutes, stirring after 5 minutes.  Drain macaroni (careful of steam!) and return to baking dish sprayed with nonstick cooking spray.  Set aside.

 

Place butter in a 1 quart glass measure; microwafe on High 55 seconds, or until melted.  Blend in flour and 1/2 teaspoon salt;  stir until smooth.  Gradually stir in milk;  microwave on High 5 to 7 minutes or until thickened, stirring at 1 minute intervals.  Add cheese and stir until melted.  Stir cheese sauce into macaroni.  Bkae at 325 degrees for 20-25 minutes.  Sprinkle with paprika.  Serves 6.

 

There's not much to brag about how I found this recipe.  Bottom line it was poor planning on my part that brought me to a recipe that has quickly become a family favorite.  Of course, I can only eat a little of this due to it's high carb content, but it's oh so good!
