• Dec. 13, 2008 - Christmas Cinnamon Cookies

Here is a great healthy sugar cookie alternative.

2 1/2 cups whole wheat pastry flour or spelt flour

1 Tbls cinnamon

1/2 tsp nutmeg

1 tsp baking powder

1 tsp salt

1/2 cup coconut oil (you could use butter)

2/3 cup honey cyrstals

1 tsp vanilla extrac

2 eggs

1.  Blend first 5 ingredients together and set aside.

2.  Blend the oil, honey crystals and vanilla together.  Blend in eggs.

3.  Blend dry ingredients into liquid ingredients until mixed, do not over beat.

4.  Divide dough in half and refrigerate several hours.

5.  Remove half the dough at a time and place on floured surface.  Lay a piece of wax paper over dough and roll out about 1/8 inch thick.

6.  Cut with cookie cutters and place on ungreased cookie sheets.

7.  Bake at 375 degrees for 6-8 minutes, remove to wire rack to cool.  Decorate as desired.
