Me and my mom made a bunch of cookies yesterday! We made Honey spice snaps, Chocolate gooey butter cookies, Chewy coconut macaroons, and Unbaked cookies! I love cookies! Here are the recipes for all of them:

    Honey Spice Snaps

    1 cup brown sugar, packed

    3/4 cup shortning

    1 egg

1/4 cup honey or dark corn syrup

    1 tsp. ginger

    1/2 tsp. salt

    1/2 tsp. cinnamon

    1/4 tsp. cloves

    11/2 tsp. soda

    21/4 cups flour

In a mixing bowl, cream brown sugar shortning. Add the egg and honey or corn syrup and mix well. Mix all dry ingrediants in bowl. Stir into sugar mixture untill well blended. Shape into balls. Dip  half the ball in water, then in sugar. Place sugar side up. Bake on ungreased cookie sheet at 350 degrees for 12-15 minutes. makes 2 dozen.

    Chocolate Gooey Butter Cookies

1 (8-ounce) brick cream cheese, room temperture

1 stick butter, at room temperture

    1 egg

    1 tsp. vanilla extract

1 (18-ounce) box moist chocolate cake mix

    Confectioners sugar, for dusting

    1: Preheat oven to 350 degrees F.

2: In a large bowl with a stand mixer, cream the cream cheese and butter until smooth. Beat in egg. Then beat in vanilla extract. Beat in the cake mix. Cover and refrigerate for two hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon  sized balls and then roll them in confectioner's sugar. Place on an ungreased cookie sheet, two inches apart. Bake 12 minutes. The cookies will be soft and "gooey." Cool completly and sprinkle with more confectioners sugar, if desired. Credit goes to Paula Deen for this cookie recipe.

    Chewy Coconut  Macaroons

    2 1/2 cups flaked coconut

    3/4cups all-purpose flour

    1/8 teaspoon salt

    14 ounces sweetened condensed milk

    1 1/2 teaspoons almond extract

Preheat oven to 300 degrees. In a bowl, toss together the coconut, flour and salt. Stir in condenesed milk and extract until blended. Mixture will be thick and sticky. Drop by rounded teaspoonfuls 3" apart on baking sheets lightly coated with nonstick cooking spray. Bake for 18-22 minutes or until edges are slightly browned. Cool for two minutes before removing to wire racks. Yield: "32 cookies"

    Unbaked cookies.

    2 cups sugar

    6 tbsp cocoa

    1/2 cup butter

    1/2 cup milk

    2 cups oatmeal

    1 cup coconut

This mac and cheese recipe is my mom's. It is sooooooo better than store bought!! You have to try it. It is also a good recipe for girls who are learning to cook because it's very easy! Here is the recipe:

    QIUCK COOK MAC & CHEESE

    3 c. cooked macaroni (about 1 1/2c. uncooked),  2/3 c. evaporated milk,  1 1/2 c. shredded cheese.

After cooking macaroni, drain and rinse with cool water and return to pan. Add evaporated milk and cheese. Cook and stir gently until cheese melts.for a thinner sauce, add a little more milk. You can use any kind or combination of cheese.
    It's sooooooooo GOOD!
    Blessings, Jessica

    Bean burritos

Me and my mom made these last night. They were soooooooooooo good!!    I loved them!   I decided that I would give you all the recipe. I hope you can try these some time! Here it is.

    16 oz. dried pinto beans

    1 1/2-2 t. cumin

    1 T. salt & 1 1/2 t. garlic

    1/4 t. basil

    1 t. oregano

    20 (9-10") tortillas

    mozerella cheese

Crock pot:  Add together first six ingredients in your crock pot  in  1 1/2 -2 qts water. Set your dial on LOW at night (10-11 pm if your crock pot is very efficient & you want them done by noon). In the morning, when you check them, you can decide if they need more water, or higher heat, ect.

To proceed: Drain beans, reserving 2 1/2-3c. liquid. Mash with potato masher. Stir so beans are relatively smooth. Place 3-4 T. in center of tortilla with cheese. Fold in edges, then fold top over bottom & place seam side down on 9x11  greased backing pan. When pan is full bake at 375-400 degrees for 15-20 minutes, or until hot. Watch them so they do not brown unless you want them crispy.

Optional additions on top: Lettuce (to serve on/or top), chopped tomatoes, 1 sm. onion (minced), sour cream, salsa.

There, now you can all try these delicious bean burritos I loved!  We had tomatoes and sour cream on ours, but either way they are VERY good!

    Blessings, Jessica
