10.16.2006 - Hot Rolls for the Hot Soup!

    I hadn't made fresh bread in a while (I really don't bake at all through the summer!)  But the smell of that stew simmering just made me hungry for rolls.  Not just any rolls.  Homemade rolls.  Rolls made with freshly ground wheat! Mmmm... and so nutritious!
    So I did it.  Rather than just think about it, I actually got up out of my chair (the one I'm in now) and got busy.  I pulled out my mill, I set up my mixer, lined up my ingredients, and began to wax nostalgic when I pulled the recipe out of the drawer.  Really, the things I'll get sentimental over!  Maybe it's the pregnancy.  Maybe it's fall.  Maybe it's getting older.  I dunno...

The last of the wheat berries disappearing into the grinder.


Freshly ground wheat, it smells good already.


My 'sponge'- step one, mix the yeast, hot water, a little honey, oil, wheat gluten, and dough enhancer (it's got vitamin C in it, it acts as a bit of a preservative) with a bit of flour, then let it sit... the yeast starts to do its thing.


Can you tell the difference?  A few minutes later it's gotten a little 'puffy'.


Start adding more flour and 'kneading' until dough begins to pull away from sides.  Enough flour, now just keep kneading.  My arms don't even ache after this...


My kids love watching the mixing and kneading.


Plop it on a well oiled counter, punch it down, do a little hand kneading just to feel like a pioneer... or something like that...


Shaping a couple of loaves is much quicker, but I wanted rolls.  It's tedious, but worth it.  I even let the kids get a little oily handed dough shaping action, so much for uniformity.  Oh well, you should've seen their eyes light up when I said they could help shape the buns!  (I used to be much more upight, the thought of little people with oily fingers in my house would've driven me crazy not too long ago...)


Under cover in warm place to rise... and we wait... salivating like Pavlov's dogs... (Remember the crock pot is sitting near by with the chicken soup!)


Risen and ready to bake. Yay!


Oh yeah!  Brushed with butter... so yummy!


Liberty back for more after the soup... and again for a bedtime snack... they don't last long in a family of 7.  And that was a 2 loaf recipe... I've made rolls with my 6 loaf recipe, but ugh, it takes a long time to hand roll that many rolls!  I guess I'll have to try it with the kids helping! 

    Well, there you have it, our bread-making-soup-eating evening.  I definitely love that about fall and winter around here!  And I love that my children love it now too!  After all, so much that I do is truly 'for my children's sake'!

I'm sitting here salivating!!!! PLEASE give me your recipe for rolls!!!! I've used a bread recipe I have and tried to make rolls but they were barely edible!! They were heavy, dense, and like rocks!!! I asked my FIL (who used to be a baker) for advice and he said that you couldn't make decent rolls at home. That you needed special steam/spray equipment or something like that! I can make bread that is passable (I'm learning!) but like you, I like rolls! Yours looked delicious!! Please share your recipe and advice! I'm making soup this week and they would be great together. I don't have a grain mill, but we have flour from a local windmill that we visited recently so I can use freshly milled whole grain too! I also have a big Kenwood Chef mixer which can do the mixing and kneading for me. Thanks for this!

We made homemade whole bread last night! We then rolled them out and filled them with red cabbage, garlic, onions, lean ground beef and a bit of cheddar cheese. Then we grilled them and they were oh so yummy! I am almost drooling thinking of the four leftover ones in the fridge upstairs!

She loves it! Often, when she sleeps in it, she just leaves it on all day the next day... Well, it's like a dress, right? And if we aren't going anywhere that day, why bother dirtying another outfit? Oh well, I'm sure she'll outgrow it eventually...
