Thursday, March 23, 2006 - Pot Roast

This is my kids favorite meal.  We really enjoy it after Sunday morning worship services.  I put it in the oven and voila! when we get home the meal is done.  The smell that hits you at the front door is priceless.

 

1 roast (shoulder or chuck tastes the best, but any kind is great)
5-8 potatoes, peeled and cut into 3 or 4 pieces (I use Russet)
1 small package carrots, peeled and sliced in to 3 or 4 pieces
2-3 onions, peeled and quartered.
Tony Chachere's Creole Seasoning to taste

 

Put roast, potatoes, carrots and onions in roasting pan.  Season liberally with creole seasoning.  Cook for 2-3 hours at 325 degrees.

 

Serve with green beans and yeast rolls (if you have time).
