Kung Pao Pork (no peanuts)

We finally have cool-ish weather here in Houston. This always makes me think of food-- even more often than I already do! This is a quick (less than 8 min cook time) and very simple recipe that we like to eat over rice (the sticky, medium grain kind).
KUNG PAO PORK
Makes 2-3 servings.
1/3 c. water
1/4 c. soy sauce (I like Kikkoman)
2 1/2 T sugar
1 T lemon juice
2 tsp cornstarch
1/4 tsp dried crushed red pepper
2 T peanut or vegetable oil
3/4 lb lean boneless pork loin, cut into 1/2 inch cubes
2 large cloves garlic, minced (get kind in a jar for extra speed)
1 small sweet red or green pepper, cut into thin strips
1 small onion, cut into wedges
1. Combine first 6 ingredients in a bowl, stirring with a whisk until blended; set aside.
2. Pour oil around top of preheated wok or nonstick skillet; heat on med high for 1 minute. Add pork and garlic; stir-fry 3 minutes or until pork is lightly browned. Add pepper strips and onion; stir-fry 3 minutes or until veggies are tender.
3. Stir in soy sauce mixture; cook, stirring constantly, 1 minute or until thickened. Serve over rice.

WE went to a chinese buffet on sunday and I thought I was getting the spicy chicken, General Tso's. But it wasn't! So I think I got my chinese food names mixed up. Is it the Kung Pau that's spicy? Certainly sounds like it on your recipe. I will print this out for my spicy lovin hubby! And thanks for the no peanuts recipe. My son's face freaked out this summer from a PB&J so I'm avoiding it until he's five.

Ya mean I gotta type the whole thing? Garsh Marsh, (LOL!) I wanted to be lazy! Okay, another calorie burned for typing five more minutes won't hurt :)

I was reading your last post, and it made me think of the Brad Paisley song " Time Well Wasted". The song is so great because it makes you realize that whatever it is that needs to be done, (i.e. school) will get done, but this beautiful thing you are wasting your time on may never happen again. And the memories and time are so much more valuable. Yup, it sounds like you had a wonderful week of time well wasted.
Its so cold here!! John actually put pants on this morning!!! My body is just killing me, but we will wait and see what God has in store for us. BTW, a while back you aksed where in TX we were considering. Austin/San Marcos. But if you have suggestions...we will listen. :)
