Quick trip and meal ideas

Dozer and I just got back in town from visiting my sister in OKC. Poor thing had to go to the ER last week and she had a terrible time with the post-effects of a spinal tap. But I am so thankful that she tested negative for meningitis! While the reason for the visit stunk, it was nice to spend a few days with her. She's doing much better today so I came back home. Dozer and his cousin Benjamin had a great time playing and being goofy little 2 year old's together. :-)
I'm still waiting for David to get home. I flew back this afternoon, picked the big boys up from the sitter and then rushed to get dinner ready. They've had fast food and Denny's since Monday, so the least I can do is cook! (Even though I did have leftovers in the fridge that went untouched).
Dash is REALLY hungry because he thought that the lunch prepared for him today "looked yucky"...serves him right to be hungry then! I sure hope he didn't say what he was thinking...but if he did, oh well. He just has to learn his lesson to eat what's prepared for him or go hungry until the next meal! Poor guy has to pick the day that we eat late though. Dinner will be ready around 6:30pm and we usually eat at 5pm. Rumble, grumble... They have eaten all of the apples and oranges out of the fruit bowl-- so waiting isn't too bad of a thing, right?
Anyhow, that got me thinking about quick meal ideas.
Tonight, I put some frozen meatballs in a pan and covered it with brown gravy (and a little sour cream mixed in). I'll be serving it with rolls, broccoli, mashed potatoes and most likely a bit of cranberry sauce (it's as close to lingonberry as I can get around here).
Another quick thing we eat around here are frozen cheese ravioli. We don't like the dried or the kind in the refrigerated section...but the frozen are pretty good. Cover with spaghetti sauce and maybe some italian sausage. Mmmm...
Any quick meal ideas y'all would like to share? You know, the really, really convenient kind! I need some more ideas to use this month. December is just SO busy...
Gotta go eat! PLEASE share your ideas with me! I have a feeling this won't be the first rushed evening around here.

Well today we spent most of the day at the doctor's office and then 30 more minutes at the pharmacy getting meds...equals too late to really "cook" anything before hubby got home.
My answer: three cans of stew quickly heated on the stovetop, roll out pie crusts lined in a baking pan (a top and a bottom), dumped the heated stew in, popped it in the oven for 30 minutes...beef potpie came out of the oven just as hubby walked in the door looking like I'd slaved all day over his piping hot meal! *giggles*
Not really what I would call "cooking" but on a day like today it worked oh so well!
Another quicky meal we all seem to like on days like today is BBQ meatballs. We microwave a bowl full of them for 5 minutes, meanwhile...I open a few cans of veggies and get them heating on the stovetop, pull out the meatball and stir in a bit of BBQ sauce and heat for another 5 minutes...in that total of 10 or so minutes everything is ready to serve.

My daughter Kendra made a really good and easy recipe the other day - it was a bag of pepperidge farm stuffing, chopped turkey (leftovers), frozen broccoli and cream of celery and cream of mushroom soup mixed with milk poured over it, topped with shredded cheese. This was sooooo good. And I especially liked that I didn't have to cook it.
I just got your comment as well - and um, we are like total dorks too - my husband is an electronics/computer geek that can't remember where he put his keys/socks/medicine _____(fill in the blank) from one second to the next. He is a big husky guy too so you would never guess him to be the type - but I like him. We do the same kinds of things - and have even ended up at Home Depot! It's all about perspective. (Hey! I'm going to blog about that sometime!)

I have 8 minutes before I shut off this monster and head to bed. My quickest meals are the stand bys - Chicken Dumpling soup, spaghetti, anything crockpot, Chicken Breasts/Rice/Vegetable.

OOOOhhh, love the meatball idea...do you crockpot? I just started this past September. I throw 3 boneless, skinless chicken breasts in with a can of diced tomatoes and this seasoning packet from McCromick (it says something like crock pot chicken on it). Pour in a little water and 2 1/2 hours lager, voila! I steam frozen broccli (just the heads part) for 12 minutes, microwave 2 sweetpotatoes for 12 minutes (long story, we have 2 microwaves). I've also done chicken breasts, with a can of cream of broccoli soup, milk, stir up, cook in crock pot for 2 1/2 hours (everyonse says the house smellls terrible, but they LOVE this meal), the last 30 minutes or so, I throw in some frozen broccoli (heads only). I serve with basmati rice (which I usually cook up a big batch and it lasts 2 nights). Another big hit is cooked and de-veined shrimp. I buy it already prepped when there is a good sale. I put it in the skillet with some Smart Balance, low-sodium teriyaki grilling sauce until thawed and heated. Then, serve with steamed green beans and brown rice. The shrimp thaws and heats up in 15 mins. AGain, I make enough rice to last 2 nights. So, while the shrimp is heating, the green beans are microwaving.
