It's not
quite as good as the cooked-all-day-long kind, but it is still really good (and super fast/easy). The recipe calls for cooked chicken, but you can sub
leftover turkey or rotisserie chicken meat pulled off the bone.
It's a bit peppery (just how I like it) but the boys thought it was a bit "spicy". I used leftover carrots/celery from a party tray I took to church. YUMMY!!!
EASY CHICKEN AND DUMPLINGS
Serves: 4 Prep: 9 min Cook: 19 min
3 celery ribs, sliced (about 1 cup)
2 carrots, sliced (about 1 cup)
3 (14 oz) cans chicken broth
1/2 tsp poultry seasoning
1/2 tsp pepper
1 2/3 cups all-purpose baking mix
1/2 cup milk
3 cups chopped cooked chicken (or turkey)
1. Combine first 5 ingredients in a large pot. Bring to a boil; cover, reduce heat, and simmer 6 minutes or until veggies are tender.
2. Meanwhile, stir together baking mix and milk. Turn out dough onto a lightly floured surface; roll doll (or pat) to 1/8th inch thickness. Cuit into 3x2 inch strips.
3. When veggies are tender, stir in chicken. Bring to a boil; reduce heat to med-low. Drop dough strips, 1 at a time, into simmering broth. Cover and simmer 8 minutes, spooning broth over dumplings occasionally. Serve immediately.

Sounds yummy - I can't wait to make chicken & dumplings next week when the weather is not a balmy 70 degrees!

Somebody else who rolls out the dumplings instead of dropping balls of dough into the chicken broth! My Mom makes the best ever homemade dumplings. She makes two big pots every year for our family reunion. We didn't go this year, and when she came home my son wanted some dumplings. She *cheated* and bought some frozen biscuits, thawed them, rolled them out, cut them into strips, and dropped them in the broth. *I* could tell the difference, but my son couldn't. They were actually quite good!
