Easy Overnight Pancakes

I know, I know... ALL pancakes are inherently easy.  I have no idea why it is no big deal for me to cook up a pound of bacon first thing in the morning (before coffee!) and yet I find it impossible to mix up a batch of pancake batter.  Not even the just add water kind.  I told you it was bad!

So I ran across this recipe for a batter you can mix the night before and just put it in the fridge.  Maybe you can do this with all batter, but "or overnight in the fridge" was specifically mentioned on this particular recipe.

Oh, and to top it all off, I have real Maple Syrup!!!  Nope, not Griffin's $1 a bottle from WallyWorld... It's the real deal, ya'll. 

(I can hear the ovations now... wait, my family probably wouldn't even notice.  Except that it's a bit runnier than our usual stuff.  But *I* will know... I will know.)

Without further adieu, here is ze recipe.  I'll post an update tomorrow morning to let y'all know how it came out.

Overnight Pancakes

2 large eggs
1 1/4 c. milk
2 tsp. vanilla
3 T. butter, melted
2 tsp. baking powder
2 T. sugar
1 1/2 c. all-purpose flour
3/4 tsp. salt

1.  Beat the eggs, milk and vanilla on high speed until light and foamy.
2.  Stir in melted butter.
3.  Whisk dry ingredients together and then quickly add to egg/milk mixture.
4.  Refrigerate overnight (or let rest for a few minutes)-- batter will thicken.
5.  Drop 1/4 c. batter onto lightly greased griddle.
6.  Flip when bubbles form and break and edges are a bit dry looking.

If you want to add blueberries, chocolate chips, etc., add them between steps 5 and 6.

***update***

We had these this morning and boy was it SUPER easy!  The taste and texture were pretty good... but not perfect.  And I am looking for perfection here.  Like fresh Cracker Barrel pancakes that almost melt in your mouth.

So this may or may not end up a permanent part of our family menu, but it's in the running.  Seeing as perfect pancakes are purely subjective and at the whims of personal preference, you should try these.  My picky husband thought they were really good.  And the boys, well, they like anything that's covered in syrup!

Hey, thanks for this recipe Marsha. I've been trying to find more 'made-from-scratch' recipes and this just fits the bill.

Now, I just hafta make that dreaded trip to the grocery store. Sigh...

I find pancakes to be a big deal too - and I don't know why.
We like to make Pumpkin Pancakes in the fall. I tried to find my recipe on my old blog - but it is hiding!
My friend Kathie has me making my own syrup now - using Mapeline - it is pretty dang good!
Anyway - happy pancakes.

We just made overnight pancakes for the first time yesterday and they were great. My recipe used alot of oatmeal and I was afraid they would come out too heavy, but it worked out fine!

We did that one time - made the batter and stuck it in the fridge overnight... and the batter was really think and the pancakes were super thick... maybe we should try yours.

You're welcome - I was so happy to give it to you!! I actually was going to take the post down, in fear of people being mad I didn't pick them, but why would I punish the people I picked? Ah, well, I hope no one was upset! lol

And, I wish you could come for A's party - man you'd be like one of the people I'd LOVE to meet! Maybe soon - though.

We'll have to try these. I actually fix pancakes and bacon for supper occasionally. Oh...and I love Cracker Barrel's pancakes....in fact, I love most everything from Cracker Barrel:)

You're so funny, Marsha. I totally relate to breakfast though. I just really don't like cooking first thing in the morning. Even AFTER coffee! (NOTHING comes before the coffee! It's prerequisite to QT as well.)
B'fast at our home is sort of "you're on your own" or "fend for yourself." So it's really simple -- cereals, granolas, breads, and fruit. I don't make good pancakes. :-( And my waffes aren't so great either. :-(

You'd be proud. I was inspired by your pancake post.
DD has a friend spending the night, so I agreed to make them b'fast in the AM. Pancakes and bacon (after coffee!). They turned out well.

BODY weight in cheese?? Hardly! That would be QUITE a bit more than 44 lbs. Ha!

I LOVE the idea of pancake batter ready to go. I'll have to try this. Thing is though, for me, it's not the mixin' and makin' that's bothersome about pancakes--it's the cleanin'! I ALWAYS get batter splattered everywhere.
