Pumpkin Logs
Here is the recipe as promised for the pumpkin logs.
3 eggs
1 c sugar
1 tsp vanilla
¾ c all-purpose flour
¾ c pumpkin
1 ½ tsp cinnamon
1 tsp ginger
1 tsp pumpkin pie spice
½ tsp nutmeg
1 tsp baking powder
½ tsp salt
1 tsp lemon juice
Grease a 15in X 10in X 2in baking pan.
In a bowl, beat eggs, sugar, and vanilla. Add the flour, pumpkin, baking
powder, and salt; add the cinnamon, ginger, pumpkin pie spice, and nutmeg.
Spread batter evenly in the prepared pan.
Bake 375 for 15 minutes or until cake springs back when lightly touched.
Turn cake onto a kitchen towel dusted with confectioner's sugar. Roll cake
in towel, jellyroll style, starting with a short end. Cool completely on a
wire rack.
Filling:
1 pkg cream cheese
1 c confectioner's sugar
¼ c margarine or butter, softened
1 tsp vanilla extract
1tbsp lemon juice
In a mixing bowl, combine the filling ingredients, beating until smooth.
Unroll cake; spread filling over cake to within ½ inch from edges. Roll up
again and refrigerate at least 1 hour before serving. Freezes well, too.
Go ahead. Make it. I promise you won't regret it. Well, at least until it's time to step on the scales.

I make these too! (I call it a pumpkin roll) I got the recipe from a lady I used to work with 12 or 13 years ago. They've become a Thanksgiving tradition and everyone always raves about it.
