Red Beans and Rice
We're in a season right now where we have to really watch our grocery bill. I know that others out there are in the same boat so I'm going to share cheap recipes as I come across them. Red beans and rice fits the bill perfectly!
1 lb bag of kidney beans (rinsed and picked through) $1.49
1 onion (chopped) $.89
1 clove garlic (minced) $.50
2 bay leaves
pepper to taste
4 tsp chicken bullion seasoning mixed w/ 1 qt hot water
water to cover the bean a couple of inches
Just combine all the ingredients and mix in the crockpot overnight on low (about 10 hrs). In the morning check the beans to see if there is too much liquid for you. If there is, mash a few beans to help thicken the sauce and turn the crockpot to high to help evaporate some water. Make sure to take out the bay leaves before you eat!
Now for the rice.
2 cups of dry rice $.50
4 tsp chicken bullion mixed with 1 qt of hot water
garlic powder to taste
Mix it all together in a pot on the stove and follow the cooking directions on the bag of rice. I usually cook mine about 25 minutes.
Then I mix the rice with the beans in the crockpot. I have a big crockpot and it is packed full. Total cost is about $3.50 assuming that you already have the seasonings. I made this for a church potluck that's why I started it at night. You can start it anytime you want!

We're having red beans and rice for dinner tonight. My recipe is not so inexpensive though. I throw 2 cans of kidney beans, 2 cans of Rotel, and 2 packages of Turkey kielbasa (sliced) in the crockpot. That makes a lot of leftovers!
