Jul. 2, 2008 - Fitness Minded Camp Recipe

Prior to our family mini-vacation/camping trip.  I found it difficult to find healthy recipes online for my family. 

Had we gone straight to the campsite and stayed in one place the whole time, I could have made a lot of the meals ahead of time and froze them.  Taking them out of the cooler right before warming them back up for our meals.  However, I did not have that luxury on this trip and I had to purchase food right before we went to set up camp.  I had to get a little creative.

One thing that was a cinch to make was quick turkey burritos.  We had just finished a 15 mile canoe trip and the toddlers were cranky and starved!  I have no idea why since they both devoured ham sandwiches and the entire bag of trail mix during the course of the trip. 

With a large bunch of starving people, I needed to cook quick.  This meal was nice because the whole wheat tortillas contained all the food and I didn't have much to wash afterwards, which meant nap time for mom!  Woo!  Hoo!

Turkey Burritos

1 bell pepper, chopped

1 onion, chopped

1 lb. pkg of lean ground turkey meat

1/3 cup salsa

1 pkg low sodium taco seasoning

Toppings of your choice (We were too hungry to worry about this part)

Whole Wheat Tortillas

Brown ground turkey with the vegetables.  When completely cooked through, toss in the seasoning packet (I didn't add any water due to the salsa).  Cook this together for a while and then add in the salsa.

Place ground turkey in whole wheat tortillas and enjoy!  You could add toppings if you're eating this at home.
