I made this on St. Patrick's Day and I'm a little late in posting.
It was delicious, and because of that I will share the recipe. This is from allrecipes.com and was the recipe of the day on March 17th.
Ingredients:
4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine, softened
1 cup buttermilk
1 egg
1/4 cup butter, melted
1/4 cup buttermilk
Directions:

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.

In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.

Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean, about 30 to 50 minutes. You may continue to brush the loaf with the butter mixture while it bakes.
I have been taking a CLE LightUnit on Home Economics, and these are my two favorite recipes so far. (I was reminded to post these when I made the minestrone soup for dinner. It smells so good when it is cooking!!!)
APPLE PANCAKES
Ingredients
2 eggs
1 1/4 c milk
4 T melted butter or oil
1 c flour
1/4 c whole wheat flour
3/4 t salt
1 T baking powder
3 large apples
Directions
Beat eggs. Add milk and shortening. Mix dry ingredients and add them slowly, beating as they are added.
Peel and core apples, leaving them whole. Slice the apple across, making rings about 1/8 inch thick.
Prepare griddle or skillet by coating it with 2 tablespoons of oil or by spraying with baking spray, Heat it until water splashed on it sizzles. Use a fork through center of the apple rings to dip them into batter and place them on the griddle. Fry until golden brown on bottom, then flip to fry on the second side.
Serve with butter and syrup.
Makes about 24 pancakes. (This needs to be doubled if you are feeding the whole family!)
LOW-CAL MINESTRONE SOUP
Ingredients
2/3 c chopped onion
2 T vegetable oil
1 lb turkey sausage (I use several patties of morningstar sausage)
1/2 c fresh parsley
1/4 t powdered garlic
2 t dried oregano
2 t dried basil
1/2 t salt, or to taste
pepper, to taste
6 c chicken broth
2 cans (14 1/2 oz each) tomatoes
1 medium1 medium zucchini, sliced
1 pkg frozen mixed vegetables
1/2 c elbow macaroni
1 can northern beans (kidney beans work, too)
Directions
In a large kettle, over low-medium heat, saute onion in oil until tender-about four minutes. Add the next seven ingredients. Cook until sausage is no longer pink. Add the broth and vegetables and bring to a boil. Add the macaroni and cook for ten minutes.
Add the beans and simmer three or four minutes more or until heated through.
Yield: 16 one-cup servings
Hint: Make chicken broth with 6 c water and 6 t chicken bouillon.
I made these for dinner last night and just finished making them again today. They are easier to make then regular biscuits because the step of rolling and cutting the dough is eliminated. I found the recipe when Jill was cleaning out her "files". It is from the march issue of Better Homes and Gardens.
PREP 20 min. BAKE 10 min. OVEN 450 degrees F.
INGREDIENTS Nonstick Cooking Spray
2 cups all-purpose flour
1 Tbsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
4 Tbsp. cold unsalted butter, cut in small pieces
3 Tbsp. finely chopped green onions
3/4 cup cold buttermilk
12 small pear or grape tomatoes
Olive oil
PREPARATION 1. Preheat oven to 450 degrees F. Lightly coat a pan of twelve 2 1/2-inch muffin cups with nonstick cooking spray; set aside. 2. In medium bowl stir together flour, baking powder, salt, and baking soda. With pastry blender or two knives cut in butter and shortening until flour mixture resembles coarse crumbs. Stir in green onions. Make a well in center; add buttermilk all at once. Toss with fork to moisten all ingredients. 3. Turn out dough onto lightly floured surface. Quickly knead 10 to 12 strokes until dough is nearly smooth. Divide dough in 36 walnut-size pieces; pat gently into balls. Place three balls in each muffin cup. Press 1 tomato in center of each; brush with oil. 4. Bake 10 to 12 minutes, until golden brown. Cool slightly on rack. Serve warm. To reheat, wrap in foil; warm in 350 degrees F oven for 8 to 10 minutes. Makes 12 biscuits.
Hey! I just made the most successful recipe of my career so far, I think! And what came out of the oven was a little piece of heaven, I'm telling you! So if you even have the smidgen of interest in baking anything, try these for sure!
This cookie recipe is very easy and fast to make. It was given to me by my grandmother. I like it because you only have to put the pan in the oven once without a shortage on numbers. Beware! Once you eat one cookie, you will not be able to keep yourself from eating the rest! Also, you can eat the dough plain because there are no eggs in it.
SPARKLING DIAMOND COOKIES
1 cup butter
1/2 cup sugar, plus 1/4 cup
2 1/4 cups flour
1/2 teaspoon salt
1 1/2 teaspoon vanilla
1 teaspoon almond extract
1. Beat together the butter and 1/2 cup sugar until blended and fluffy.
2. Mix in the flour, salt, vanilla, and almond extract.
3. Pat into the bottom of a 15 1/2 x 10" shallow pan.
