I went to a Naturopath for a nutritional workup. I found out I am intollerant to dairy. It almost made me cry. My heart screams, "What!!! No cheese!! No ice cream!!! I will surely die!!!" Well, I am still alive after my first week. For anyone who has food intolerances I have a new regard for all you have to go through just to eat.
I thought I would start posting recipes that I try-and actually like- that are free of all dairy. I also have a good friend that cannot have soy or dairy(my heart goes out to you!) so some of these will also be free of soy as welll as dairy. I will post if it is. I would love to post them in a recipe section and actually have that section linked...but alas I have not figured that part out yet. So for now they are just going to be clumped with the rest of my ramblings.
Lemon Bars
These are really cool and refreshing and also satisfy that sweet almost pie like craving! Soy and dairy free
1 1/2 C plus 3 T flour divided(you can use whole wheat but white is lighter)
2/3 C powdered sugar
3/4 C soy free shortening
3 eggs-beaten
1 1/2 C sugar-I used fructose and it is great
1/4 C lemon juice
Combine 1 1/2 C flour with powerded sugar and shrtening. Mix well. Pat into greased 9x13 and bake at 350 for 20 min.
Whisk remaining flour, eggs, sugar and lemon juice until frothy. Pour over hot crust and bake andother 20 min. Dust with powdered sugar if desired.
Berry Cake
Soy and Dairy Free
2C flour ( I used 1/2 wheat and 1/2 white)
1 T baking powder
1t baking soda
1/4 t salt
1C sugar ( I used sucanet)
1/4t nutmeg
3/4C water
3 eggs
1/4C canola oil
4C berries ( I used the triple berries that are from Costco)
Combine sugar, nutmeg, water, egg, and oil together-blend well. Add flour, baking soda and powder and salt-mix well. fold in berries. Spread in a bundt or angel food cake pan that has been well greased. Bake at 350 for one hour. Cool on wire rack .
