~ Grapes ~

When life gives you grapes-or your good friend Laurie--- make grape juice!
Here is the process we took.

Get some beautiful grapes- these are concords

wash and put grapes in the steamer/juicer

As it steams the juice comes down out and into jars.

Wah-Lah---end product ---wonderful fresh grape juice!

~ If you have tomatoes... ~

make tomato soup!


We have been blessed this year with a great harvest, especially tomatoes. I decided to make and can soup with some of them. If you have never done this let me encourage you. It is not only healthy for your body but also your budget! I did quarts for our family, pints for lunches and to share and even half pints for Rick to take to work. It even makes a nice gift for someone who is sick or maybe having a baby.

It is not scary I promise---Here is a glimpse into the process.


Start with some nice ripe tomatoes.


Put the tomatoes and  some chopped up onion and garlic into your blender. You can also add green beans, squash and carrots- this is a great way to hide those veggies from the kids, and maybe the husband too!


  When it is a nice puree pour it into a stock pot. Keep doing this until all your produce is used OR your pot is full!

Add seasonings and let this simmer for about 1-2 hours.


Now, if you do not have one of these handy dandy food strainers I personally think you should stop reading this and run down and get one. Pour your soup mixture into the funnel and start cranking...


Your soup will come out  one part and all the peel and seeds the other part. After you have repeated this step until the soup is finished put your waste material back through one more time. This way you will get every last drop of that good tasting stuff in your soup!



Then have your kids come in and lick the pot clean!

You will need to pour your soup into your jars, put the lids and rings on snugly and pressure can them at 10 lbs for 30-35 min. ( or whatever your book says)


Here is your finished product! Put them in your pantry and know that you have accomplished a lot today.

~ Getting things done-Thrifty meal tip ~

I have spent the last few days canning. Canning pear syrup, pear butter and chicken broth. Has anyone else noticed how expensive just a plain old box of good for you(or at least as good as it can be) chicken broth has gotten? Here is my little ol recipe for chicken broth that you can can. It actually is a way to make chicken stretch over several days ending in canning the broth.

Here goes...

buy 2 whole chickens ( or get them out of your yard, freezer...whatever works for you)

1st day-
roast 1 chicken on you bbq and have roasted chicken, biscuits, coleslaw and corn on the cob.
 save leftover chicken carcass in fridge

2nd day-
have baked chicken and apples(with butter,brown sugar and cinnamon) with stuffing and a salad.
 save leftover chicken carcass in fridge
3rd day
In your crock pot make veggie soup with noodles(making sure to have a good amount of leftovers for tomorrow) and have with biscuits.
On this day take both chickens and put in BIG stock pot, fill with water. Add carrots, onions, celery and any seasonings you like. Simmer half the day on med low- getting really hot but not boiling. Cool and keep in pot overnight in fridge (or porch if it is a cool night)
4th day
Put leftover veggie soup on warm in crock pot.
Take stock pot w/chickens and take any meat off the chicken carcass(throw the bones away or give them to your chickens to finish off) adding to your veggie soup- you now have chicken noodle soup! You can even add cream to make it a cream of chicken noodle soup. Eat this tonight.
Strain all the liquid out of the stock pot using a jelly bag. Set aside the liquid. Take all the veggies you just strained out and add them to your soup for tonight.
Fill canning jars with the chicken stock you have set aside. Water bath them for 10 min. and you now have chicken broth for several more meals.

~ Crockpot Recipes ~


Cajun Chicken

3-6 slices of bacon
2 bell peppers, chopped- I use a orange and a yellow or red
onion-chopped
several celery stalks- chopped
enough chicken for your family-I use about 9 breasts-boneless skinless (you could use the thighs)I also  like mine sliced into strips
Cajun seasoning
canned diced tomatoes-at least one 14 1/2 oz can- but do it to your taste
enough rice for your family- I think I make enough for 10 cups

**You need your rice to be cooked by the time you need to eat so time this part accordingly, making rice whenever you need to during the day. I use a rice cooker and I think it takes about 30 min.

Cook bacon till crisp -take out and crumble and set aside

Using the bacon grease cook veggies- use a slotted spoon and remove veggies into crock pot

Using this same grease cook chicken. I have to add a little chicken broth because it is a bit too dry by this time. Cook about 5 min. until browned on all sides.

Put chicken and liquid into crockpot and stir up. Cook on low for @6-9 hours( this really depends on the thickness of your chicken you want the juices to not be pink.) I sometimes add a bit more chicken broth if it looks too dry-we like the juice to pour over the rice.

When the chicken is done grab a helping of rice and pour some of the chicken mixture over the top. I usually have a green salad and some sliced apples, green beans and maybe warm bread with it for dinner.

ENJOY!!


And here is another---

This is really 2 recipes but the second is made from leftovers of the first.
It does not have a name because I made it up.


pork loin roast- the cheap huge one from costco or cash n carry- but use only 1 as they are packaged in 2
ortega diced green chilis- large can
green enchilada sauce- you can use the red if you prefer
sliced limes
sour cream
cilantro
black beans-canned- 2-4 reg. cans depending on how beany you like things
diced tomatoes-large can
flour tortillas

slice as much fat of the roast as humanly possible and put in your crock-pot with about 1 Cup of chicken broth. I sprinkle my roast with pepper, cajun seasoning (once you use this you will be hooked for spicier dishes) I do not use much salt but a little is good
add peppers and you can add some cilantro-save some as fresh
cook on high for about 4 hours-until it can be torn apart easily
grab some tongs and shred the pork inside the pot
pour in beans and tomatoes
cook until warmed through nicely- about another hour

slice your limes put into bowl
chop your cilantro put into another bowl

warm tortillas and add a scoop of meat mixture using slotted spoon. Roll as you do burritos. Fry on lightly oiled griddle to brown and seal. place on plate drizzling enchilada sauce over the top. garnish with sour cream and cilantro- guacamole if you have it- before eating squeeze a lime over top to bring out the flavors.

Now with your leftover meat mixture (even if it is a little) add enough chicken broth, more beans & tomatoes if needed, pour in the leftover enchilada sauce and any cilantro you have left. You can add corn and cabbage too. Let simmer all afternoon and you have enchilada soup. Serve with warm tortillas and garnish with sourcream and don't forget to squeeze a lime into your soup!

I am sorry if I sound vague at times- obviously this is not an exact science so just do what you like and enjoy!

~ Dairy Free ~

I went to a Naturopath for a nutritional workup. I found out I am intollerant to dairy. It almost made me cry. My heart screams, "What!!! No cheese!! No ice cream!!! I will surely die!!!" Well, I am still alive after my first week. For anyone who has food intolerances I have a new  regard for all you have to go through just to eat.
I thought I would start posting recipes that I try-and actually like- that are free of all dairy. I also have a good friend that cannot have soy or dairy(my heart goes out to you!) so some of these will also be free of soy as welll as dairy. I will post if it is. I would love to post them in  a recipe section and actually have that section linked...but alas I have not figured that part out yet. So for now they are just going to be clumped with the rest of my ramblings.

Lemon Bars
 These are really cool and refreshing and also satisfy that sweet almost pie like craving!
Soy and dairy free
1 1/2 C plus 3 T flour divided(you can use whole wheat but white is lighter)
2/3 C powdered sugar
3/4 C soy free shortening
3 eggs-beaten
1 1/2 C sugar-I used fructose and it is great
1/4 C lemon juice

Combine 1 1/2 C flour with powerded sugar and shrtening.  Mix well. Pat into greased 9x13 and bake at 350 for 20 min.

Whisk remaining flour, eggs, sugar and lemon juice until frothy. Pour over hot crust and bake andother 20 min. Dust with powdered sugar if desired.

Berry Cake
Soy and Dairy Free
2C flour ( I used 1/2 wheat and 1/2 white)
1 T baking powder
1t baking soda
1/4 t salt
1C sugar ( I used sucanet)
1/4t nutmeg
3/4C water
3 eggs
1/4C canola oil
4C berries ( I used the triple berries that are from Costco)

Combine sugar, nutmeg, water, egg, and oil together-blend well. Add flour, baking soda and powder and salt-mix well.  fold in berries. Spread in a bundt or angel food cake pan that has been well greased. Bake at 350  for one hour. Cool on wire rack .
