I really recommend this book, for "Once-A-Month-Cooking," it's called:
Once a Month Cooking by Mimi Wilson and Mary Beth Lagerborg
isbn: 080541835-0
I think it's available thru ILL at the DeAngeli library.
Our family especially enjoys the homemade Chicken Packets...here's the recipe:
2 cups cooked chicken chopped, 1 three oz. package of cream cheese, 1 Tbsp. of chopped chives, 2 Tbsp. milk, salt to taste, 1/2 c. seasoned crouton crumbs, 2 eight ounce packages refrigerated crescent rolls, 1/4 c. melted margerine or butter
Mix first five ingredients together in a medium bowl, to make filling. Store in a 1-qt. freezer bag (label and I write the cookbook page number on the bag), Put crouton crumbs in a seperate bag and attatch it to the filling bag. Refridgerate cresent rolls. Obviously, I make a triple batch of this and freeze 3 meals....to prepare for serving, thaw filling mixture, preheat oven 350, roll out cresent rolls in to four rectangles, press perforated seems together, put 1/4 cup or more of filling on each rectangle, then put the other rectangles (from the other tube of cresent rolls over your rectangles and pinch seams together...so you have a "packet", dip or brush each with butter and sprinkle crouton crumbs over top...bake for 20 minutes.
Well, after typing all that, I think we'll have those for dinner tonight!

I don't have this cookbook, but it's by the same author...I wouldn't mind owning it! |
