Dec. 15, 2005 - Christmas Cookie Swap

Christmas Cinnamon Crackle Cookies

(with optional “add- ins”)

 

Ingredients:

I cup softened butter

1 cup sugar

½ cup brown sugar

1 egg

½ tsp. almond extract

1 tsp. vanilla extract

2 ½ cups all purpose flour

2 tsp. cream of tartar

2 tsp. baking soda

2 tsp. nutmeg

1 T. cinnamon

additional sugar for rolling

 

optional “add-ins” are as follows:  (choose one or two)

Ό cup chopped dried cranberries

Ό cup chopped raisins

Ό cup chopped dates

Ό cup chopped dried apricots

Ό cup chopped “fruitcake” fruit

½ cup chocolate chips

1 tsp. grated orange peel

½ cup chopped nuts

 

Directions:

In one mixing bowl, cream butter and sugars together.  Add extracts and egg; mix well.  Combine the next ingredients in another mixing bowl and gradually add to the creamed mixture. Add your favorite “add- in.” Shape into 1 inch balls (I use a tablespoon measuring spoon to scoop.)  Roll in sugar.  Place 2 inches apart on un-greased baking sheets.  Bake at 350 for 10-15 min or until lightly brown.  Cool on wire racks.

Cracker Candy (tastes like toffee)

Ingredients:
40 saltines
1 cup butter (do not use margarine)
1 cup lt brown sugar -- packed
2 cups milk chocolate chips

Preparation:
Line jelly roll pan or cookie sheet with aluminum foil. Place crackers side by side on foil. In saucepan combine butter and brown sugar. Bring to a boil. Boil three minutes stirring constantly. Spread over crackers. Bake in preheated 400 degree oven for 5 minutes. Remove from oven and sprinkle chocolate chips over crackers. Place pan in refrigerator until chocolate is firm. Invert pan onto flat surface. Remove foil. Break into pieces. Store covered airtight in refrigerator.
