Aztec Quiche

1 1/4 cups grated Monterey Jack Cheese

3/4 cup grated cheddar cheese

1 4oz.  can diced green chilies

1 cup half and half

3 eggs, beaten lightly

1/2 tea. salt

1/8 tea. ground cumin

1 9in  deep-dish frozen pie shell

 

Spread Monterey Jack cheese and half of cheddar over bottom of pie shell.  Sprinkle diced chilies over cheeses.  Stir together in a bowl the half-and-half, eggs, and seasonings.  Pour carefully into pie shell and sprinkle with remaining cheddar cheese.  Bake uncovered in a preheated oven at 325 degrees for 40 to 50 minutes.
