Great Granola

Rocks in my Dryer  at http://www.rocksinmydryer.typepad.com/  has listed eating well recipes as the topic for Works for Me Wednesday this week.  I am not sure on the amount of fat in this recipe but it does have lots of healthy ingredients and is really good.

Granola

Bring the following ingredients to a boil:

2/3 cup honey

1/4 cup oil

1 tbsp. cinnamon

Mix in a large bowl:

1/2 c. unsweetened coconut

4 c. rolled oats

1 c. unsalted sunflower seeds

1/2 c. wheat germ

1/2 c. oat bran

1/4 c. sesame seeds

1 c. chopped nuts (almonds, walnuts, pecans, or whatever you like)

Mix honey mixture and dry mixture together.  Flatten into a large pan with sides and bake at 325 degrees for 10 minutes.  Stir and flatten and bake for 10 more minutes.

After it comes out of the oven I add dried fruit.  My favorites are raisons and dried cranberries. Today I was out of oil so I did 2 tbsp. butter and 2 tbsp. apple juice concentrate and it turned out really good.

We are leaving mid-week for my parents' cabin in the mountains so some of these meals will be up there.

Tuesday - Creamy chicken pasta salad and garlic parmesan breadsticks

Wednesday - Hamburgers

Thursday - Shrimp Scampi

Friday - Paprika Chicken

Saturday - Chicken Enchiladas

Sunday - Grandma's cooking

Spagetti Sauce

1 lb. ground beef 

1/2 onion, chopped

3 stalks celery, chopped finely

2 cans (16 oz.) tomato sauce

1 can (10 oz.) tomato puree

1 can (8 oz.) tomato paste

1/2 tea. salt

1 tsbp. italian seasoning

1 tsp. garlic powder

1 cup water

1/2 cup wine

 

Brown hamburger, onion and celery, drain fat.  Put in crock pot with all other ingredients.  Cook on low 6-8 hours or on medium for 4 hrs.  The amount for the spices is what I start with and then after it has cooked a couple of hours I taste it and add a little more until it taste the way I like it.  Also you can pan sear a rump roast and add it to the sauce.  Just take it out and slice it when you are ready to serve it.  It comes out very tender this way.

Aztec Quiche

Aztec Quiche

1 1/4 cups grated Monterey Jack Cheese

3/4 cup grated cheddar cheese

1 4oz.  can diced green chilies

1 cup half and half

3 eggs, beaten lightly

1/2 tea. salt

1/8 tea. ground cumin

1 9in  deep-dish frozen pie shell

 

Spread Monterey Jack cheese and half of cheddar over bottom of pie shell.  Sprinkle diced chilies over cheeses.  Stir together in a bowl the half-and-half, eggs, and seasonings.  Pour carefully into pie shell and sprinkle with remaining cheddar cheese.  Bake uncovered in a preheated oven at 325 degrees for 40 to 50 minutes.

Chocolate Fudge Cake

This is my husband's favorite cake; it is very chocolaty and moist.  I topped each piece with vanilla ice cream and a spoonful of cherry pie filling.  This made it extra yummy. 

 

1 pkg. chocolate fudge cake mix

1 6oz. pkg. chocolate fudge instant pudding

1 12oz. pkg. semisweet chocolate chips

4 eggs

1 cup sour cream

1/2 cup oil

powdered sugar

 

In a large bowl beat all ingredients except the powdered sugar.  Batter will be thick.  Pour into a greased and floured bundt pan.  Bake at 350 degrees for 45 minutes or until cake springs back when touched lightly on top.  Let cool 10 minutes in the pan.  Invert on a platter and dust with powdered sugar.

Alpha bread

This recipe is great for making rolls, bread sticks, soft pretzels or alphabet letters.

It makes a lot so I usually half the recipe.  This can be done in a bread machine, just use the dough cycle and put ingredients in the order your bread machine manufacturer recommends. 

 

Alpha bread

 

1 pkg. active dry yeast

2 Tsbp. sugar

2 1/2 cups warm water

3 Tsbp. olive oil

6 1/2 cups flour

2 Tsp. salt

1 egg

Poppy seeds or sesame seeds

 

1. Combine the yeast, sugar, water, and olive oil in a very large mixing bowl.  Let sit for 10 minutes.

 

2.  Add flour and salt.

 

3.  Knead dough for about 10 minutes until dough is smooth and elastic.

 

4.  Cover bowl with a thin layer of oil and put dough in bowl, cover and let rise until doubled, about 2 hours.

 

5.  Preheat oven to 450 degrees.

 

6.  Punch dough down and shape into desired shape.  Put onto greased cookie sheet and brush with beaten egg and sprinkle with poppy seeds or sesame seeds.

 

7.  Bake for about 10 minutes or until golden brown.

 


I am discovering day by day God's faithfulness to give me just what I need just when I need it most. It is my hearts desire to trust him more completely, as he molds me into the woman, wife, and mother he created me to be.
