Monday - Mexican Cornbread with salad
Tuesday - Chicken Pot Pie with mashed potatoes
Wednesday - Shrimp Stir Fry over brown rice
Thursday - Spaghetti and salad
Friday - Sloppy Joes, Tator Tots and Broccoli
Saturday - Tacos
Mexican Cornbread Recipe:
2 boxes of jiffy corn bread
2 lbs. grd beef or turkey
Taco Seasoning
1 bag of corn
1 bag of shredded cheese
Brown and drain your ground beef and add taco seasoning.
Mix your cornbread and pour 1/2 the batter in the bottom of your baking dish then layer as follows:
Ground Beef
Cheese
Corn
Remaining 1/2 of corn bread mix
Bake as directed on jiffy box.
