Music Mondays... my mp3 collection.
You can tell a lot about a person by the music they enjoy. Worldview, morals, and personality can shine through the melodies to form a picture in your mind. Music is such a powerful part of our culture.
Last year I was given an mp3 player by my grandpa. He wasn't using his anymore, and I didn't mind a hand-me-down. It's not your top of the line Cadillac mp3 player, but it fits my purposes. Also, I got a Wal-Mart gift card for the online mp3 download store thingy. I finally got around to using it. Here's what I got:

I think I'm finally settled enough to start blogging regularly again! YAY! I will be gone from this Friday-Tuesday though. I'm going on a little work vacation with my dad. I'm off to listen to my new music!

YAYYYYY!!!!
Ok, so once again I'm being a bad girl... not sticking with the schedule. But today is special, so it's ok. :)
IT'S MY BIRTHDAY!!!!!!
The big 1-7...
I'm going to have a red velvet cake with cream cheese icing, and some cookie dough ice cream. For my birthday dinner, I requested Ranch Breaded Tilapia (fish, duh) with Cajun Sweet Potato Fries. And applesauce. :)
That's about all there is to say about it. I haven't opened presents yet really, OH, but I did get 2 Natalie Grant cds from my grandparents. That was cool!

Sorry I went so long without posting. Last week was one of THE busiest weeks of my entire life. I'll soon be back to my regular posting schedule, but I don't know when. I just wanted to say... I'm not dead. :)

My first birthday!!

MY BLOG IS ONE YEAR OLD TODAY!!!!!!
I'm so happy! I'm pretty much jumping up and down. I've been looking over this year's entries and series. I did the Modesty, Proverbs 31, and Love series this year. I've blogged really random stuff too, like that Christmas gift suggestion list. That was fun. :)
Thank you, totustuus, for addicting me to HB and getting me started!
Here's to another year of blogging and connecting with homeschoolers! My baby blog is now becoming a toddler, and hopefully it is starting to mature into a more educated and edifying blog. Maybe. Or perhaps I've gone totally looney and it's just a place to have fun. I'm hoping it's a healthy mix. :)

Fun Fridays: Cheesy Mexican Potato Soup
Perfect for cold days! Filling and very tasty! I made this recipe up myself. I just threw things in a pot that sounded good, added spices, and a recipe was born!
Cheesy Mexican Potato Soup
6-7 cups potatoes, peeled *
3 cups milk
1/2 tsp. salt
1 Tbsp. butter or margarine
1/2 tsp. minced garlic
2 1/2 Tbsp. of your favorite salsa* (2 1/2 Tbsp. suggested, I sometimes add more to taste)
1/2 cup cheese*
1-2 cubes chicken bouillon
1/4 tsp. chili powder
1/4 tsp. cumin
1/2 cup cooked chicken breast cubed and shredded
1 pinch crushed red pepper
1 dash each paprika, cayenne pepper, black pepper
*Potatoes- either cut up potatoes and boil them, or this recipe also works great with leftover baked potatoes. Just peel the skin off of them and cut them up. You don't need to heat them up before using them.
*Salsa- works best with mild salsa that has been liquified in a blender. (If you use really spicy salsa, omit red and cayenne pepper!)
*Cheese- you can use really any kind of cheese, cheddar, mozzerella, mexican, colby jack, velveeta. I usually use about 1/4 c. cubed velveeta and 1/4 c. of other grated cheese. It works really well.
In a large soup pot, combine all ingredients. Use a potato masher to mash potatoes and combine with other ingredients. The mixture should be thinner than mashed potatoes, but relatively thick. (Think pancake batter thickness, but still pretty chunky) If the consistency is not to your liking, add a little more milk. Cook on stove at medium heat until simmering. Simmer until thoroughly heated, about 5-7 minutes. Pour soup into bowls and enjoy. Each person can add salt and pepper to their taste. I made this recipe less salty on purpose because some people are not big on salt. I add plenty of salt to my serving, however! Makes about 5-7 servings. Tip: Sometimes I put a corn tortilla in the bottom of each bowl before I put soup in it.
You really can't go wrong with this recipe, just mix everything together, and enjoy.
Variations: This is where it gets fun! The above recipe is basically a foundation for different variations on the original soup. I have added everything from spicy mexican rice to pinto beans into the recipe. I just go through the fridge and dump in interesting leftovers. Tastes great!!!
