Simple Savory Pork Roast
- Prep Time: 15 Minutes
- Cook Time: 1 Hour
- Ready In: 1 Hour 15 Minutes
- Servings: 6
INGREDIENTS:
- 1 1/2 tablespoons fresh rosemary
- 2 teaspoons garlic salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon freshly ground black pepper
- 3 pounds boneless pork loin roast
DIRECTIONS:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large, resealable plastic bag, mix rosemary, garlic salt, thyme, and pepper. Place pork roast in the bag, seal, and toss until thoroughly coated with the garlic salt mixture. Transfer to a medium baking dish.
- Cook pork roast 1 hour in the preheated oven, or to an internal temperature of 160 degrees F (70 degrees C).
Of course, with it just being the two of us, I didn't make this whole recipe. I cut it in half and that seemed to work out well. Also, with this I also made some cilantro potatoes that I've made before and that Travis LOVES! Here's the recipe for them...
Cilantro Potatoes
INGREDIENTS:
8 to 10 small red potatoes, unpeeled and quartered
2 tablespoons butter
3 garlic cloves, minced
1/2 teaspoon chili powder
salt and pepper to taste
1/4 cup chopped fresh cilantro
DIRECTIONS:
- Place potatoes in medium saucepan; add just enough water to cover. Bring to a boil. Lower heat and cook for about 10 minutes or just until tender. Drain.
- In the same saucepan, melt butter over medium heat. Add garlic; cook and stir 2 to 3 minutes or until tender. Add potatoes, chili powder and cilantro. Season with salt and pepper. Toss to coat.
Travis and I LOVE eating dishes with cilantro in them!! MmmmmmmMMMMmm. We have several other favorite recipes with cilantro I'll post another time for ya'll.
I still have some pork teder loin I need to use up... Does anyone have any good suggestions for how to cook it???
